Suzanne Grimal’s recipe

Ingredients for a large cake (12 parts)

  • 400 g of T65 flour,
  • 1 egg,
  • ½ sachet of yeast,
  • 2 tbsp. to s. sugar,
  • 2 tbsp. to s. oil (rapeseed or sunflower),
  • 750 g of apples or pears (rustic varieties),
  • 125 g of softened unsalted butter,
  • 10 cl of liquid cream.

The preparation

In a bowl, combine the flour, 1 tbsp. to s. of sugar and yeast, then stir in the soft butter. Make a well and add the egg, oil and liquid cream, mix until a smooth ball is obtained.

Leave to rest and prepare the apples: peel them, core them and cut them into strips.

Roll out the dough into two discs, one large and one smaller.

Line a buttered pie with the largest circle of dough. Arrange the apples, packing them well, sprinkle with the remaining sugar and possibly a few small bits of butter. Cover the fruit with the second circle of dough. Solder the edges and make a small chimney in the center (a hole held by a small roll of baking paper for example).

Bake at 180 ° C for 45 minutes, until the cake is golden brown and the apples are soft.
