Tartiflette is a French potato casserole with onions and bacon, which is topped with spicy Reblochon cheese – a dream come true!

Ingredients for 4 servings:

  • 1.2 kg potatoes (mainly waxy)
  • 2 small onions
  • 1 tbsp oil
  • 200 g diced bacon
  • 75 ml white wine
  • 4 tbsp crème fraîche
  • Salt pepper
  • Butter for greasing
  • 350 g Reblochon cheese
  • parsley

Preparation time: 75 minutes

Preparation of the tartiflette:

  1. Put the potatoes in a saucepan with cold water and cook over medium heat for about 15 minutes. In the meantime, peel and finely dice the onions.
  2. Drain the potatoes, let them cool down briefly and peel them, then cut them into slices.
  3. Heat the oil in a pan and sauté the onions along with the bacon cubes. Pour white wine on top and simmer until the wine has evaporated.
  4. Stir the crème fraîche into the onion and bacon mixture and season with salt and pepper.
  5. Preheat the oven to 200 ° C top / bottom heat.
  6. Grease a baking dish with butter, spread half of the potato slices on the base and lightly season with salt and pepper. Now spread half of the onion and bacon cream on top. Top with another layer of potatoes and the remaining onion mixture.
  7. Halve or slice the cheese and place on the potato bake. Bake the tartiflette in the preheated oven for about 35 minutes. Sprinkle with chopped parsley to taste and serve.

Tips for your tartiflette

Reblochon is usually available at the cheese counter in the supermarket, but you can also use another soft cheese such as Camembert as an alternative. It is important that it is nice and creamy and melts well. If you want to prepare the potato casserole vegetarian, replace the bacon with smoked tofu – it also tastes nice and spicy. In some recipes the white wine or the crème fraîche are omitted, so you can modify the tartiflette according to your taste. There the casserole is very rich, a light leaf salad is ideal as a side dish, and of course a glass of French white wine should not be missing with the meal!
