The gourmet and spring recipe of zucchini fritters: Femme Actuelle Le MAG

Spring is fast approaching, and so is the heat. It is therefore high time to start feasting on seasonal recipes, filled with freshness. On this occasion, chef Chloé Monchalin (Filakia, Petit Café d'Athènes) shares with us her traditional recipe for kolokithokeftedes. This name refers to zucchini fritters with feta cheese and fresh herbs. A real treat ! Shall we get started?

The recipe for zucchini fritters

To indulge yourself as an aperitif or as a starter, an assortment of savory donuts is always a good option. You can vary them according to your tastes, with different seasonal vegetables and flavored with the spices you prefer. Here, the recipe draws its source directly from traditional Greek cuisine. We let you discover it and especially savor it without moderation.

The ingredients of the recipe

  • 2 zucchini
  • 2 stalks of spring onion
  • 100 g of feta
  • 3 eggs
  • 1 lemon
  • 1/2 bunch of parsley
  • 1/2 bunch of coriander
  • 10 mint leaves
  • 180 g flour
  • 50 cl of frying oil

The steps of the recipe

* To make this recipe, you will need the following utensils: 1 coarse grater, 1 large salad bowl, 1 frying pan.

1. Wash your vegetables in plain water.

2. Coarsely grate your zucchini using the coarse grater.

3. Finely slice your onions and cut your herbs (parsley, coriander, scallion and mint).

4. Mix everything, and add the crumbled feta cheese, the eggs, then gradually the flour.

5. When the oil is hot, place small dumplings in the pan and brown them on each side. Repeat the operation for all your balls of dough.

6. Place them on absorbent paper and you're ready to go!

7. Enjoy hot with a squeeze of lemon juice and tzatziki.
