The real recipe for crêpes Suzette by Cyril Lignac: Femme Actuelle Le MAG

The ingredients of Cyril Lignac's crêpes Suzette recipe

  • 300 g flour
  • 3 eggs
  • 2 tablespoons of oil
  • 70 cl of whole milk
  • 3 tablespoons of sugar
  • 5 cl of orange blossom
  • The zest of an orange

For the Suzette butter:

  • 100 g of softened butter
  • The zest of an orange + the orange juice
  • a yellow lemon
  • 15 g icing sugar
  • 5 cl of Grand Marnier (optional)

For cooking:

  • 25 g butter for cooking
  • 1 tablespoon of neutral oil
  • Orange
  • Some candied zest (optional)

The steps of the crêpe Suzette recipe by Cyril Lignac

Step 1 : In a bowl, combine the flour and sugar. Gradually add the eggs, oil, milk and orange blossom. Add the orange zest using a microplane and set aside.

2nd step : Mix the softened butter with the orange and lemon juice. Add the orange zest and mix again. Then pour in the icing sugar and the Grand Marnier before setting aside in the fridge.

Step 3: Pass a piece of oiled paper towel on a pancake pan, pour the dough, forming a pancake. Leave to brown on both sides then add a knob of Suzette butter and let melt. Fold the pancake in four and serve with a few slices of sautéed orange in the pan. You can also add some candied zest if you like it!
