  • 5 g of salt
  • 10g sugar
  • 250g of flour
  • 10g fresh yeast
  • 100 g of beet juice
  • 1 egg
  • 60 g of soft butter

The stages of preparation of Abdelkarim's pink brioche burger buns

1. In the bowl of your robot, start by pouring the sugar, then the salt.

2. Then add the flour.

3. Crumble the yeast and pour it into the bowl of your food processor.

4. Once you have added all the dry ingredients, now pour in the liquid ingredients. Start with the beetroot juice first.

5. Then crack the whole egg in it.

6. Knead everything on speed 1 for 8 minutes, with the hook.

7. Once a ball forms and comes off the walls, add the soft butter to the food processor.

8. Knead at minimum speed for 2 minutes, then increase to speed 1 for 8 minutes.

9. The kneading is finished. Remove the hook and let your dough rise for 1 hour. Pastry chef's tip: put the bowl of your food processor with your dough above the radiator or in the oven with a bowl of hot water.

10. After the hour of growth, put your dough on cling film. Degass it slightly to flatten it and cover it with cling film. Then let it sit in the fridge for 4 hours.

11. Once the dough has cooled down, cut it into several pieces.

12. Take a piece, flatten it, fold it back on itself, then form a ball. Flatten the top slightly with the palm of your hand.

13. Place the ball on a baking sheet covered with baking paper. Do the same with each piece of dough.

14. Then let your dough balls rise for 30 to 45 minutes at room temperature.

15. With a little cream and a brush, brush your balls of dough.

16. Then sprinkle them with poppy seeds.

17. Bake your burgers for 15 minutes at 160 ° C.
