The Tour de France… of the stomach Today’s stage: farmhouse yogurts ”taste of childhood” from Meurthe-et-Moselle


Appearing on the “Masterchef” show ten years ago, the Alsatian Nicolas Rieffel continues to highlight the terroir he loves so much. Present on the Tour de France with the E. Leclerc stores as an ambassador of the ”Local Alliances”, he meets local producers every day who offer him specialties to taste. As the Grande Boucle passes through our regions, from July 8 to 16, he presents us with some essential or more confidential gastronomic specialties, and gives us the verdict of his palate.

This Friday, on the occasion of the 7th stage between Tomblaine (Meurthe-et-Moselle) and Planche des Belles Filles (Haute-Saône and Territoire de Belfort), he tasted yogurts from the Forges farm, available, among others , in the Vandoeuvre-lès-Nancy hypermarket.

“La Ferme des Forges has been a family business since 1997, located near Gondrecourt-le-Château, in the Meuse. This morning I met Vincent Bontant, who took over the business from his parents. It has 120 dairy cows for an annual production of around 1 million litres. Vincent attaches particular importance and attention to animal well-being and the choice of food for the animal,” says the chef, visibly thrilled.

What organic!

“He also pays attention to the manufacturing process. The milk is processed immediately after milking, with slow pasteurization in a bain-marie, which allows the nutritional and taste elements of the milk to be retained”. Then, the yogurts are stirred on a bed of fruit or as a dessert cream. “Vincent only offers organic products, with organic ingredients. Even the chocolate yoghurt is fair trade and the sweet yoghurts are made with cane sugar. The specifications are really advanced for this type of organic product: no pesticides, no GMOs, no coloring, no synthetic flavoring, which makes it possible to sublimate the taste”.

A taste that evoked good memories for him: “It immediately reminded me of my childhood, this taste of yogurt that takes us on a journey right away”. These favorites? “I particularly liked the natural organic yogurt with cane sugar for its very creamy side. It is not at all acidic, a real delight. It’s a pleasure for everyone, children and adults, because you don’t find the side that is sometimes hard to digest with these farm yoghurts. It’s 100% validated! »
