A 200 megapixel photo sensor, what is it actually for?

The simplest (even simplistic) answer to this question is to say that this sensor allows you to take prettier photos and videos than the vast majority of other smartphones, including the most advanced photophones on the market.

With this 200 megapixel sensor, the Xiaomi 12T Pro is able to take shots with much more light information than the average, which therefore gives sharp and precise photos or videos, with a higher level of detail.
