Three vegetarian cabbage recipes

A little bomb of fiber, minerals and vitamin C, but above all, in these three recipes, as nourishing as a starch, cauliflower gives us the potato in the heart of winter. Whether it is baked in the oven with chickpeas and onions to garnish a pita bread, roasted in slices browned in butter with spices (spread, for example, with cottage cheese with herbs for more deliciousness), or even grated in semolina to transform into pizza dough, this flower vegetable sends habits rolling.

Spicy Chickpea Cauliflower

For 4 people

Preparation: 10 minutes. Cooking time: 30 minutes

  • 1 large cauliflower cut into large florets
  • 400 g canned chickpeas, drained and rinsed
  • 1 large red onion cut into quarters
  • 200 g of young cabbage leaves
  • 2 tbsp. to s. olive oil
  • 2 tbsp. to c. powdered cumin
  • 2 tbsp. to c. powdered coriander
  • 2 tbsp. to c. powdered ginger
  • 1 C. to c. smoked paprika
  • 2 tbsp. to c. salt

Sauce

  • 60g tahini
  • juice of 1 lemon
  • 2 tbsp. to s. olive oil
  • 4 tbsp. to s. water
  • 1 C. to c. salt
  • Freshly ground black pepper

To accompany

  • 25 g coarsely chopped fresh coriander
  • 40 g roasted pumpkin seeds
  • warm flatbreads (pita type)

Preheat the oven to 180°C. Place the cauliflower, chickpeas, red onion and cabbage leaves in a large roasting pan, and toss well with the oil, spices and salt. Bake for 25 to 30 minutes, until the cauliflower is cooked.

Meanwhile, prepare the sauce by mixing the tahini with the lemon juice, oil, water, salt and pepper, until you obtain a consistency thick enough to scoop with a spoon (add a little water if necessary). Taste and adjust the seasoning with salt and lemon juice. Drizzle the hot cauliflower with sauce and sprinkle with coriander and pumpkin seeds. Serve with warm flatbreads.

Choose a good, round cauliflower that you will slice like bread. There are varieties of cauliflower in all colors, don’t hesitate to mix them.

Ingredient for 4 people

  • 1 cauliflower
  • Soft butter
  • turmeric
  • cumin
  • lovage (optional)
  • Espelette pepper (optional)
  • salt and pepper

Preparation

Preheat the oven to 200°C. Place the sliced ​​cauliflower on a baking tray covered with parchment paper. Add 1 knob of butter to each slice and sprinkle with turmeric and cumin. Salt and pepper. Bake for 20 minutes until the cauliflower turns a nice golden color.
