"Tous en cuisine": Cyril Lignac's recipes, ingredients and utensils for the week from June 1 to 5: Femme Actuelle Le MAG

Another week full of flavor that Cyril Lignac has prepared for us! What start the month of June with delight. From Monday May 1, head to Italy with conchiglioni stuffed with spinach and goats and a muffin with dried fruits for dessert. The trip continues south with Tuesday, an exotic bouillabaisse. Then on Wednesday, Cyril Lignac will go to the United States with a menu that smells good in summer: a Caesar Salad and Eton strawberry mess. Thursday, the chef offers you a little detour through Spain to taste the traditional Gaspacho, before coming to settle in Greece on Friday, for a little moussaka. Here are the ingredients and utensils you will need to make the chef's recipes:

Monday June 1st: Conchiglioni stuffed with spinach and goat cheese and Muffins with dried fruits

THE CONCHIGLIONI STUFFED WITH SPINACH AND GOAT CHEESE

The ingredients for 4 people :

  • 20 shell pasta
  • 200g fresh goat cheese
  • 20cl whole cream
  • 300g baby spinach cooked in water and well cooled
  • chopped garlic cloves
  • peanut butter
  • 100g green beans, cooked and cut in 4
  • 1 washed zucchini, cut into cubes and cooked in water
  • 1 lemon
  • olive oil
  • coarse salt
  • fine salt and freshly ground pepper

Utensils :

  • 1 saucepan + 1 skimmer
  • 1 blender + 1 maryse + 1 frying pan + 1 spatula + 1 spoon
  • 1 microplane

THE RECIPE FOR DRIED FRUIT MUFFINS

The ingredients for 4 people :

  • 100g melted butter
  • 2 eggs
  • 250ml milk
  • 70g sugar + 30g
  • 300g flour
  • 2 tsp. 1 teaspoon baking powder
  • ½ tsp. 1 teaspoon fine salt
  • 70g crushed toasted hazelnuts
  • 70g dried cranberries or other berries or mixed berries
  • 1 orange
  • 2 tsp. ground cinnamon
  • butter for mussels

Utensils :

  • 1 salad bowl + 1 spatula
  • 1 microplane

Tuesday June 2: Exotic Bouillabaisse

THE EXOTIC BOUILLABAISSE RECIPE

The ingredients for 4 people :

  • 4 white fish steaks, cod type
  • 200g pieces of rock fish
  • 200g of corn flour pasta (linguine or spaghetti)
  • 3 tomatoes, cut into cubes
  • 10g peeled and chopped ginger
  • ¼ bunch of lemon balm or flat parsley or mint
  • 1 onion, peeled and diced
  • 1 lemon zest + 1 orange zest
  • 1 clove garlic, peeled and dewatered
  • ¼ of fennel washed and cut into pieces
  • 1 lemongrass stem, bevel cut
  • 10cl of white wine
  • 3 tablespoons ricard
  • 1 soft-boiled egg (cooking 6 minutes)
  • 100g of neutral oil + 100g of sesame oil
  • 50g capers
  • 100g well boiled potato pulp
  • 1 tsp. wasabi in a tube
  • 3 tsp. soy sauce
  • 20g butter
  • 12 large croutons rubbed with garlic
  • olive oil
  • fine safransel and freshly ground pepper
  • 200g cooked chickpeas
  • 2 garlic cloves, peeled and chopped, mashed
  • 1 small green seedless pepper, chopped into a puree
  • 8cl tahini sauce
  • 1 lemon juice
  • 1 tsp. chopped flat parsley
  • some pine nuts
  • 2 tsp. olive oil
  • fine salt

Utensils :

  • 1 casserole dish + 1 spatula
  • 1 pan + 1 dough tongs + 1 salad bowl

Wednesday June 3: Caesar Salad and Eton strawberry mess

THE CAESAR SALAD RECIPE

The ingredients for 4 people :

  • 5 hard-boiled eggs (9 minutes of cooking) + 1 egg yolk
  • 2 warm roasted chicken breasts, cut into cubes
  • 2 Roman
  • 1 piece of parmesan cheese + 30g grated parmesan cheese
  • ½ clove of garlic
  • 20g anchovy paste
  • 1 tsp. wine or sherry vinegar
  • 1/2 lemon juice
  • 7cl of neutral oil
  • 50g whole liquid cream
  • a few drops of Worcestershire sauce (optional)
  • Red tabasco
  • 30g small fried bread croutons with 1 clove of garlic
  • fine salt

Utensils :

  • 1 board + 1 knife + 1 peeler
  • 2 salad bowls + 1 whisk + 2 spoons

THE STONE STRAWBERRY MESSON RECIPE

The ingredients for 4 people :

  • 2 large meringues purchased or 4 to 6 small meringues
  • 20g vanilla icing sugar or vanilla sugar
  • 200g whole cream 35%
  • 250g strawberries cut into quarters
  • 1 tsp. icing sugar
  • 100g strawberry puree

Utensils :

  • 1 very cold salad bowl + 1 hand mixer
  • 1 salad bowl + 1 maryse + 1 spoon

Thursday June 4: Gazpacho, vegetable salad and Crispy shrimp salad, spicy cream

THE GASPACHO RECIPE, VEGETABLE SALAD

The ingredients for 4 people :

  • 4 washed tomatoes
  • 2 peeled and seeded red peppers, 1 of which cut into small cubes
  • 1 peeled cucumber, 1/2 of which cut into small cubes
  • 1 melon: ¼ of which cut into small cubes
  • ¼ watermelon cut into large cubes
  • 1 seeded green jalapeno pepper
  • some cherry tomatoes cut in half
  • 1 lemon juice
  • a few mint leaves
  • 20cl of olive oil
  • 5cl sherry vinegar
  • toasted bread croutons
  • fine salt and freshly ground pepper

  • 1 blender
  • 1 salad bowl + 1 spoon

THE SHRIMP SALAD RECIPE, SPICY CREAM

The ingredients for 4 people :

  • 16 raw shrimp, peeled and pitted
  • 150g of panko breadcrumbs or muslin flakes or bread crumbs
  • 100g rice flour
  • 2 eggs
  • 1 Roman
  • 2 peeled avocados
  • a few chopped coriander leaves
  • 2 new onions, washed and minced
  • 12cl sesame oil
  • 5cl white balsamic vinegar
  • 2 tsp. mayonnaise
  • 50g Greek yogurt
  • 1 tsp. chopped ginger
  • 1 clove of chopped garlic
  • Tabasco
  • Sesame seeds
  • Sunflower oil
  • fine salt and freshly ground pepper

Friday June 5: Moussaka and Dulce de leche, vanilla ice cream, coconut

THE MOUSSAKA RECIPE

The ingredients for 4 people :

  • 1kg ground lamb shoulder
  • 400g fresh diced tomatoes
  • 1 peeled and chopped onion
  • 1 clove of peeled garlic
  • 1 sprig of thyme
  • 3 washed eggplants
  • 10g ground cumin
  • 100g grated parmesan
  • olive oil
  • fine salt and freshly ground pepper

Utensils :

  • 1 casserole dish + 1 spatula
  • 1 board + 1 saw knife + 1 frying pan + 1 spatula
  • 1 microplane

THE RECIPE OF DULCE DE LECHE, VANILLA ICE CREAM, COCONUT

The ingredients for 4 people :

  • 4 scoops of vanilla ice cream
  • 1 can of sweetened condensed milk
  • 100g grated coconut toasted in the oven

Utensils :

  • 1 pan + 1 can opener
  • 2 salad bowls + 1 maryse + 1 whisk + some ice cubes
  • 1 abacus
