“Tous en cuisine”: recipes and list of ingredients for Tuesday January 5 by Cyril Lignac: Femme Actuelle Le MAG

To the delight of viewers, Cyril Lignac has decided to put on his apron and comes back to give us his good recipes and other chef's advice on M6. Faced with the success of the program and the enthusiasm of the French for cooking, it was indeed very difficult to resist the temptation!

Every evening from Monday December 21 at 6:45 p.m., the inhabitants of France will once again be able to enjoy the chef Cyril Lignac who has planned for the occasion special holiday recipes. At his side always, the host Jérôme Anthony will try to follow these new recipes and several French families will also be present in duplex. But we always count on the presence of famous guests to spend very pleasant moments!

Tuesday January 5:

DISH: BEEF FILLET WITH PEPPER, SPINACH SALAD

The ingredients for 4 people :

  • 4 beef fillets of 130g (at room temperature)
  • 3 tablespoons of mignonnette black pepper
  • 1 tablespoon of butter
  • 2 tablespoons of cognac
  • 10 cl of white wine
  • 20 cl of liquid cream
  • 2 tablespoons of roast juice (gravy broth)
  • 2 handfuls of washed and hulled spinach leaves
  • Sunflower oil
  • Olive oil + white balsamic vinegar
  • Fine salt

Utensils :

  • 1 pan + 1 spatula + 1 plate + 1 spoon
  • 1 salad bowl

DESSERT: BEGGINS PIE

The ingredients for 4 people :

  • 100g soft butter + 10g to butter the pie ring
  • 100 g sugar
  • 1 vanilla pod
  • 2 eggs
  • 100 g of ground almonds
  • 1 roll of shortbread or sweet dough
  • 100 g of crushed almonds and hazelnuts
  • 100 g walnut kernels
  • 100 g of diced blond raisins
  • 100g of blond raisins
  • 2 tablespoons of liquid honey
  • Icing sugar to garnish

Utensils :

  • 1 salad bowl + 1 spatula + 1 maryse
  • 1 pie ring + 1 fork + 1 tablespoon
  • 1 pastry rack

Wednesday January 6:

DESSERT: KING CAKE WITH ALMOND

The ingredients for 4 people :

Puff pastry:

  • 2 rolls of puff pastry
  • 1 egg
  • 1 egg yolk
  • 1 tablespoon of water

Almond cream:

  • 100 g of ground almonds
  • 12g cornstarch or cream powder
  • 80 g icing sugar
  • 20 g of almond milk
  • 80 g of butter at room temperature
  • 60 g egg
  • 1 tablespoon of water

Syrup:

  • 100 g of water
  • 100 g sugar

Utensils :

  • 1 baking sheet + 1 silicone sheet or 1 sheet of baking paper
  • 1 brush + 1 small bowl + 2 salad bowls + 1 hand mixer + 1 maryse
  • 1 paring knife + 1 angled spatula
  • 1 circle 18 to 22 cm in diameter
  • 1 small saucepan + 1 whisk

Thursday January 7:

DISH: CHEESE AND PEPPER SPAGHETTIS (Cacio e Pepe)

The ingredients for 4 people :

  • 320 g of spaghetti
  • 3 tablespoons of black pepper
  • 70 g of pecorino
  • 70g parmesan
  • Coarse cooking salt

Utensils :

  • 1 high saucepan + 1 dough tongs
  • 1 mortar + 1 pestle
  • 1 wok type sauté pan

DESSERT: BLOWN LEMON

The ingredients for 4 people :

  • 4 large yellow lemons from Menton or organic, cut to ¾ and hollowed out without drilling the bottom (you can use the pulp for the juice)
  • 125 g whole milk
  • 9 g of cornstarch
  • 13 g + 60 g sugar
  • 3 g lemon zest
  • 10 g lemon juice
  • 2 egg yolks
  • 3 egg whites
  • Icing sugar

Utensils :

  • 1 saucepan + 1 whisk + 1 salad bowl + 1 bowl of ice cubes
  • 1 salad bowl + 1 hand mixer + 1 maryse + 1 tablespoon + 1 baking sheet

Friday January 8:

DISH: LEMON CREAM WAFFLES, CHIVES

The ingredients for 4 people :

Waffles:

  • 200 g flour
  • ½ sachet of baking powder
  • 1 pinch of salt
  • 4 eggs
  • 20 cl of milk
  • 5 cl of blond beer
  • 30 g of melted butter
  • 1 tablespoon of vanilla sugar

Condiments:

  • 3 tablespoons of Greek yogurt
  • ½ bunch of washed and chopped chives
  • 1 shallot, peeled and finely chopped
  • 1 lemon juice and 1 zest
  • 1 small box of lumpfish eggs
  • Salt and pepper

Utensils :

  • 2 salad bowls + 2 whips + 1 maryse
  • 1 hand mixer
  • 2 spoons
  • 1 waffle iron

DESSERT: SPICE BREAD, ORANGE ZEST

The ingredients for 4 people :

  • 200 g of water
  • 90 g sugar
  • 200 g of honey + 25 g of honey for the finish
  • 10 g untreated lemon zest
  • 10 g untreated orange zest
  • the pulp of a vanilla bean
  • 3 g of gingerbread spices
  • 200 g flour
  • 1 teaspoon of baking powder
  • 10 g of baking soda
  • 1 pinch of fine salt
  • 140 g of butter + 10 g of butter for the mold

Utensils :

  • 1 saucepan + 1 whisk + 1 strainer
  • 1 salad bowl + 1 whisk

Monday January 4:

DISH : BROTH WITH MEATBALLS AND WINTER VEGETABLES

The ingredients for 4 people :

Broth:

  • 2 liters of water
  • 2 tablespoons of coarse salt
  • 1 kombu seaweed leaf
  • 1 small handful of dried bonito
  • 5 tablespoons of soy sauce
  • 1 tablespoon of grated garlic

Dumplings:

  • 500 g of minced chicken breast
  • 1 tablespoon of sake (or white wine)
  • 1 tablespoon of soy sauce
  • 40 g leeks, washed and finely sliced
  • 1 tablespoon of chopped ginger
  • 1 tablespoon of cornstarch
  • Fine salt and freshly ground pepper

Vegetables:

  • 2 pak choï cabbage, cut into large pieces
  • 1 carrot, peeled, washed and cut into large slices
  • 8 shiitake or button mushrooms, washed and cut
  • 50 g of fresh bean sprouts

  • 120 g of plain yogurt
  • 240 g sugar
  • 3 eggs
  • 50 g of sunflower oil
  • 150 g flour
  • 1 sachet of baking powder
