Monday January 11: Pumpkin soup with almonds and fish shells au gratin with leeks
Tuesday January 12: Lentil salad with cinnamon, soft-boiled eggs and duck breasts with fruit and polenta
Wednesday January 13: Crispy tartiflette and Belle-Hélène pears and whipped cream
Thursday January 14: Mushroom omelet, yellow wine cream and blackcurrant and candied chestnut financier
Friday January 15: Salmon koulibiac, white butter

Monday January 11: Pumpkin soup with almonds and fish shells au gratin with leeks

The ingredients for 4 people :

Creamy:

  • 1 small onion, peeled and chopped
  • 15g butter
  • 500 g of pumpkin, peeled and cut into pieces
  • 1 teaspoon ground cumin
  • 1.5 liters of stock cube
  • 3 tablespoons of sour cream
  • 2 tablespoons of slivered and toasted almonds
  • A few coriander leaves
  • Fine salt and freshly ground pepper

Utensils :

  • 1 pot or saucepan + 1 spatula
  • 1 hand blender + 1 ladle

The ingredients for 4 people :

  • 4 scallops (keep the shells)
  • 200 g of white fish such as pollock or hake without trimmings and without bones, cut into cubes
  • 1 liter of court bouillon or fish stock
  • 70 g butter for the sauce
  • 20 g + 70 g flour
  • 5 cl of liquid cream
  • 1 juice + 1 fresh lemon zest
  • 2 leek whites, washed and finely sliced
  • 50 g fine breadcrumbs
  • Fine salt and freshly ground pepper

Utensils :

  • 1 saucepan + 1 spatula + 1 spider + 1 plate
  • 1 saucepan + 1 whisk + 1 microplane grater
  • 1 tbsp

Tuesday January 12: Lentil salad with cinnamon, soft-boiled eggs and duck breasts with fruits and polenta

The ingredients for 4 people :

Lentil salad :

  • 100 g of Le Puy green lentils (cook them for 30 minutes with 1 small chopped onion, 1 small diced carrot, 1 cinnamon stick and 1 liter of broth)
  • A few leaves of fresh coriander
  • 1 tablespoon of roasted salted peanuts
  • 3 tablespoons of olive oil
  • 1 tablespoon of sherry vinegar

Soft-boiled eggs:

  • 4 eggs
  • 50 g bread crumbs
  • 50 g flour
  • 1 egg, beaten into an omelet
  • Neutral oil for frying
  • Fine salt and freshly ground pepper

Utensils :

  • 1 pan of boiling water + 1 bowl of cold water with a few ice cubes
  • 1 spider + 1 salad bowl + 1 spatula + 1 tablespoon
  • 1 saucepan + 3 soup plates + 1 plate with absorbent paper

The ingredients for 4 people :

  • 3 to 4 duck breasts at room temperature
  • 15g butter
  • Fine salt

Marinade of duck breasts:

  • 25 g of oyster sauce
  • 30 g soy sauce
  • 125 g of pear puree
  • 100 g of pineapple puree
  • 3 tablespoons of honey
  • 4 tablespoons of red pepper paste

Polenta :

  • 125g precooked corn flour polenta
  • 20 g butter
  • ½ liter of chicken broth
  • 1 tablespoon of mascarpone

Utensils :

  • 1 cutting board + 1 chef's slicing knife + 1 dish
  • 1 salad bowl + 1 whisk
  • 1 frying pan or wok + 1 spatula + 1 whisk

Wednesday January 13: Crispy tartiflette and Belle-Hélène pears and whipped cream

The ingredients for 4 people :

  • 3 to 5 sheets of filo pastry
  • 1 reblochon
  • 150 g of smoked bacon, cut into small cubes
  • 1 onion, peeled and thinly sliced
  • 100 g of melted butter
  • 3 Bintje potatoes cooked in water with the skin on and cut into 0.5 cm cubes
  • 5 gherkins, thinly sliced ​​or other pickles
  • Olive oil
  • Fine salt & freshly ground pepper

Utensils :

  • 1 hot pan + 1 spatula + 1 flat plate
  • 1 cutting board + 1 chef's knife + 1 flat plate
  • 1 buttered pie ring + 1 brush

The ingredients for 4 people :

Pears In Syrup :

  • 4 fresh ripe pears, peeled and halved
  • 1 liter of water
  • 400g sugar
  • 1 lemon zest taken with the peeler
  • 1 orange zest taken with the peeler
  • 1 vanilla pod
  • 1 star anise
  • 1 cinnamon stick

Sweet whipped cream :

  • 250 g full cream 35%
  • 25 g icing sugar
  • 1 vanilla pod

Chocolate and almond sauce:

  • 8 cl of milk
  • 8 cl of liquid cream
  • 25g sugar
  • 100 g dark chocolate
  • 30 g of slivered and toasted almonds

Utensils :

  • 1 saucepan + 1 whisk + 1 spider + 1 paring knife + 1 plate
  • 1 cutting board + 1 chef's slicing knife
  • 1 hand mixer + 1 very cold salad bowl + 1 piping bag + 1 plain or fluted nozzle + 1 maryse
  • 1 small saucepan + 1 whisk

Thursday January 14: Mushroom omelet, yellow wine cream and blackcurrant and candied chestnut financier

The ingredients for 4 people :

  • 500 g Paris mushrooms, hulled, washed and cut into small wedges
  • 15 g + 10 g butter
  • 2 tablespoons of washed and chopped parsley
  • 1 garlic clove, peeled and grated
  • 12 eggs
  • 5 cl of water
  • 1 tablespoon of crushed hazelnuts
  • 1 piece of 50g parmesan or Comté
  • 5 cl of yellow wine or Jura wine
  • 2 tablespoons of heavy cream
  • Fine salt and pepper
  • Olive oil

Utensils :

  • 1 salad bowl + 1 fork
  • 2 frying pans + 1 maryse
  • 1 microplane grater

The ingredients for 4 people :

  • 90 g ground almonds
  • 100 g icing sugar
  • 1 pinch of fine salt
  • the pulp of a vanilla bean
  • 60 g flour
  • 4 egg whites
  • 30 g blackcurrant jam
  • 100 g butter
  • 3 candied chestnuts cut in 4

Financial decoration:

  • 2 candied chestnuts cut in 4
  • 1 tablespoon of blackcurrant jam + 1 tablespoon of water

Utensils :

  • 1 pan + 1 spatula + 1 bowl
  • 1 salad bowl + 1 whisk + 1 spatula
  • 1 buttered and floured 22 cm snap mold

Friday January 15: Salmon koulibiac, white butter

The ingredients for 4 people :

  • 500g fresh skinless salmon
  • 100 g cold cooked basmati rice
  • 180 g of Paris mushrooms, hulled, washed
  • 20 g butter
  • 1 onion, peeled and finely chopped
  • 4 hard-boiled eggs (cooking in boiling water 9 to 11 minutes)
  • 3 tablespoons of chopped parsley
  • 2 tablespoons of chopped dill
  • 1 egg yolk
  • 1 tablespoon of water
  • 1 roll of puff pastry
  • Olive oil

Sauce :

  • 1 shallot, peeled and finely chopped
  • 150 g unsalted butter, cut into small cubes
  • 5 cl of white wine
  • 1 lemon juice
  • Fine salt and pepper

Utensils :

  • 1 cutting board + 1 Chef's slicing knife + 1 plate + 2 salad bowls
  • 1 frying pan + 1 maryse + 1 salad bowl
  • 1 perforated baking sheet + 1 sheet of baking paper + 1 brush
  • 1 saucepan + 1 whisk
  • 1 strainer
  • 1 saw or bread knife
