How to make Galettes de Pont-Aven like Traou Mad?

Without revealing all of its techniques, the famous brand still shared the list of ingredients that make up its patties. So, to revisit this classic, you need:

  • Fresh outdoor eggs
  • Fresh Breton butter
  • Flour from the Pont-Aven mill
  • Sugar
  • 1 pinch of Guérande salt

In a large bowl, mix the butter, slightly softened, the flour and the sugar. Then, break the eggs and beat the preparation vigorously. Add a pinch of Guérande salt. Form a ball with the dough. Sprinkle your work surface with a little flour and spread it out, using a roller or a glass bottle. Form small circles of the size of your choice with a cookie cutter. Place the patties on a baking sheet covered with parchment paper. For more authenticity, don't forget to put the Traou Mad stamp on it! Finally, put the patties in the oven, making sure to brown them and not toast. Take them out of the oven, let them cool and enjoy! And to keep them, place them in a metal box. Your patties will be perfect for breakfast or to taste.
