  • 2 tbsp lemon juice
  • 1 egg white

Beat the egg whites with a mixer until stiff and slowly trickle in the icing sugar. Gradually add the lemon juice and continue stirring until a firm cream forms. Apply the frosting to cookies and other pastries with a brush or piping bag.

If sweet pastries aren’t to your liking, you can also use egg whites in savory dishes or even drinks.
