It’s so easy to make a delicious cherry cake without animal ingredients

A vegan cherry cake with sprinkles makes our food columnist Vivi really happy in summer. She likes it best with sour cherries that she has picked herself. Here she reveals the recipe.

Have you been picking cherries this year? In the pick-your-own fields, the trees are full of sweet and sour cherries and I love it when you go out on a sunny day and stuff your stomach and the baskets. My hands and mouth are red, there are cherry stones all around me and I feel like I’m in a romantic summer movie when I walk between the cherry trees in my summer dress.

And after picking, when I get home, I have to laboriously pit all the cherries, because then they become mine baked my favorite vegan cherry cake. It is a combination of delicate crumbles, sweet and sour cherries and crunchy hazelnuts. Is your mouth watering? Well, then unpack your springform pans and have the following ingredients ready for the vegan cherry cake.

Vegan cherry cake with crumbles – a poem

Ingredients for 1 springform pan ø 26 cm

  • 150 g wheat flour type 405
  • 100 g spelled flour type 630
  • 250g margarine
  • 80 grams of brown sugar
  • 100 g ground hazelnuts
  • 1 pinch of salt
  • 50 g chopped hazelnuts
  • 400 g sour cherries (fresh and stoned or morello cherries from a jar)

preparation

  1. Preheat the oven to 180 degrees top/bottom heat. Knead the flour, margarine, sugar, ground hazelnuts and salt in a bowl using the dough hook of the hand mixer. Finally, if necessary, continue kneading with your hands until a smooth shortcrust pastry is formed.
  2. Line the bottom of a springform pan (ø26 cm) with baking paper and pour in 2/3 of the dough. Press everything evenly onto the base and place the rest of the dough in the fridge.
  3. Then puree half of the cherries and spread over the base. Add the remaining whole cherries and sprinkle 2/3 of the chopped hazelnuts on top.
  4. Finally, take the rest of the dough out of the fridge, work it into crumbles with your hands and spread over the vegan cherry cake. Scatter the remaining chopped hazelnuts on top and bake the cake for 50 minutes.
  5. Let cool down and enjoy.

Tip: After baking, the vegan cherry cake is quite soft due to the margarine. So be sure to let it cool completely before you cut it.
