The best waffle recipe for soft waffles

Ingredients for approx. 10 pieces:

  • 250 g soft butter
  • 200 g of sugar
  • 1 pinch of salt
  • 4 eggs
  • 1/2 tsp grated lemon zest
  • 150 g flour
  • 150 g cornstarch
  • 1 pinch of baking soda

A whole day for waffles

So eating as many waffles as you want throughout the day sounds pretty good, we think. That is why we are happy to take up a Swedish tradition: On March 25th we celebrate the waffle day. That the Swedes devote a day to the waffles may be due to their vague pronunciation. Because on March 25th the Christian holiday of the Annunciation is celebrated, in Swedish "Vårfrudagen" – and that sounds something like "Våffeldagen".

This misunderstanding is pretty nasty for the Swedes: they celebrate their "Våffeldagen" wherever there are pastries – in the café, in the restaurant and at home. The waffle irons run hot and piles of waffles are destroyed, usually with jam and whipped cream. Celebrating is easy – with our basic recipe for waffle batter you can start your own waffle session!

Preparation:

  1. Beat the butter, sugar and salt with the whisk of the hand mixer until creamy.
  2. Add the eggs, lemon zest, flour, cornstarch and baking powder and process everything into a smooth batter.
  3. Grease the waffle iron and then bake the waffles in portions.

Rike's waffle recipe – and a delicious waffle cake

Even better than waffles: a whole waffle cake with cream and your favorite jam! Rike Dittloff shows the recipe step by step in the video and also reveals the recipe for her favorite waffles – with many tips.

Ingredients:

  • 125 grams of soft butter
  • 3 tablespoons of sugar
  • 3 eggs
  • 250 grams of flour
  • 2.5 level teaspoons of baking soda
  • 200 milliliters of milk
  • 1 dash of sparkling mineral water
  • some vegetable oil to grease

Preparation:

  1. Beat the soft butter with sugar until fluffy.
  2. Then gradually stir in the eggs.
  3. Mix the flour and baking powder and stir the mixture alternately with the milk into the egg butter mixture.
  4. Add a little mineral water to make the dough particularly fluffy.
  5. Preheat the waffle iron and let the dough rise for 15 minutes.
  6. Grease the waffle iron with a little oil.
  7. Add two to three tablespoons of dough to the waffle iron and bake the waffle
  8. Let the finished waffle cool on a wire rack.

Waffle cake – the waffle dream with jam and cream

A waffle cake is a really good idea when a visitor is about to come and want a quick dessert. The waffles are made quickly and with a few other ingredients, such as cream and jam, they can be piled up to make an impressive cake. With such a work of art you are guaranteed to delight your guests!

Ingredients:

  • 1 glass of jam
  • 1 cup whipped cream
  • 1 packet of vanilla sugar
  • Powdered sugar for dusting

Preparation:

  1. Heat the jam in a saucepan with a dash of cream.
  2. Whip the remaining cream with the packet of vanilla sugar until stiff.
  3. Layer the waffles, spreading whipped cream and jam on each waffle.
  4. Dust the finished waffle cake with icing sugar.

Ready in 35 minutes!

Tips for waffles

Whipped cream, vanilla ice cream, hot cherries or applesauce taste delicious with the waffles – here we can taste our way through countless possibilities. And in the unlikely event that waffles are left over, they can even be frozen.

Important: The waffle maker needs to be neat preheated and with tasteless vegetable oil (e.g. sunflower oil or rapeseed oil) greased otherwise the dough will stick quickly.

The basic recipe can also be varied very well: At Buttermilk waffles buttermilk is simply added as a liquid component instead of milk or soda water. Crème fraîche, rum, lemon or cinnamon also fit perfectly in the waffle batter. Here you can experiment easily and find your own favorite recipe!
