After tasting and rating more than fifty pies over several weeks and according to various specific criteria (appearance, texture, taste, quality-quantity-price ratio), here is our list, in no particular order.

The most delicious: the lemon tart by Camille Lesecq and Christophe Felder (Les Pâtissiers)

In 2012, Christophe Felder and Camille Lesecq, two former pastry chefs of Parisian palaces, meet in Alsace and decide to take over the reins of a pastry shop in Mutzig (Bas-Rhin). On the program: desserts, chocolates, sweets and ice creams, acclaimed by a large local clientele.

Our opinion : all those who had the chance to taste Camille Lesecq’s lemon tart when he was pastry chef at the Hotel Meurice have never recovered. This is the boutique version of an absolute indulgence, the almond cream bringing a real swing to the peps of citrus.

Composition: sweet dough, pastry cream and almond cream, lemon cream, spoon cookie, lime meringue. Mutzig, Dorlisheim. Price: € 3.90.

The most radical: Claire Damon’s lemon absolute (Cakes and bread)

Ethical pastry chef since 2017, Claire Damon currently makes some of the best pastries in the capital. No matter what cake you choose, you are sure to eat healthy, seasonal products without any additives or coloring.

Our opinion : during the tasting, we first soak up the very fragrant freshness of lemon before the meringue softens the palate, the shortbread of the dough brings a very pleasant texture while the olive oil arrives at the end of mouth with fruity notes.

Composition: shortbread, organic lemon cream from Italy, light olive oil meringue. Paris. Price: € 6.50.

The most herbaceous: the lime-basil tart by Thierry Mulhaupt

Trained in Paris with the greatest, Thierry Mulhaupt also attended the Fine Arts before settling, in 1991, in the historic center of Strasbourg. As a virtuoso of pastry and chocolate, he assembles tastes and aromas with the rigor of an oenologist. He specialized in pies and gingerbread.

Our opinion : this pie, which has been the house’s best seller since 2007, has many qualities. The play of textures is varied on the palate and the lime-basil association brings a powerful freshness, slightly herbaceous and terribly elegant.
