Courgettes, aubergines, cucumbers… Summer vegetables have it all, and all the more so when they are cooked in tempting and irresistible dishes. The little extra: the low price of the recipes that we reveal to you. So put on your apron and head to the kitchen to simmer all these good things. And if you don’t have time to concoct these recipes during the week, consider batch cooking.
All recipes are for 4 people.
1. Monday: zucchini and goat cheese turnovers at €11
The week starts gently with these zucchini turnovers to serve with a salad. You can also sublimate the zucchini with a delicious stuffing. Let yourself be tempted by one of our 30 recipes to reproduce at home.
Ingredients : 1 kg of small courgettes / 2 rolls of puff pastry / 150 to 200 g of fresh goat cheese / 4 cherry tomatoes / Salt, pepper
The recipe steps: Start by peeling the courgettes and cutting them into small pieces. Stew them in a pan with a little salt and pepper. Add the goat cheese and mix. Then cut the puff pastry into 4 circles and arrange the zucchini in it. Cut circles again in the puff pastry to cover the zucchini. Add some cherry tomatoes inside. Close the preparation well and bake in a preheated oven at 210°C for 10 minutes.
2. Tuesday: eggplant with feta at 15€
Do you have any eggplant left? This is the opportunity to cook them before the end of the summer. Enjoy these sunny vegetables in this amazing recipe.
Ingredients : 2 large aubergines / 1 small red onion, quartered / 1 garlic clove, halved / 2 tbsp. tablespoons pitted black olives / 150 g feta cheese in pieces / 1 tbsp. liquid honey / 2 tbsp. tablespoon olive oil / 2 stems of basil leaves / Salt, pepper
The recipe steps: In a blender, place the basil (keep a little aside), the olives, the wing, the onion and the feta. Mix everything well then cut the aubergines into slices. Brush the eggplants with a pastry brush, then grill them in a pan or under the broiler. Remember to turn them over halfway through cooking. Season then arrange the preparation on the aubergines with a few remaining basil leaves.
3. Wednesday: Eggs with tomatoes and peppers at 10€

Ingredients : 6 tomatoes / 1 red pepper / 1 green pepper / 2 cloves of garlic / 1 onion / 1 pinch of salt / 1 pinch of pepper / 1 tsp. tablespoon olive oil / 4 eggs
The recipe steps: Finely chop the onion and garlic into pieces. In a frying pan, arrange everything with a tablespoon of water and a little oil for about fifteen minutes. Cook the tomatoes in water and peel them: then remove the skin and the pulp. Place the peppers under the broiler for a few minutes to remove their skins more easily. Then cut them into strips. Simmer everything with the onion and garlic for 30 minutes. Just before serving, add the eggs to the dish and put in the oven for 5 minutes.
4. Thursday: cucumber salad with yogurt at 8€
Cucumber is the ideal vegetable in summer. To be cooked in a cold soup, in a verrine or in a salad, we appreciate it for its freshness !
Ingredients : 2 cucumbers / 300 g of Greek yoghurt / 1 clove of garlic / the juice of a lemon / 3 tbsp. tablespoons olive oil / 1 tbsp. tablespoon vinegar / 5 sprigs of dill (if you have it) / Salt
The recipe steps: Peel the cucumbers and remove all the seeds. Then cut the vegetables into slices. Sprinkle with coarse salt and leave, as is, 15 minutes to drain the cucumbers. Rinse them with clear water then dry them. Pour the yogurt into a bowl, crush the garlic, chop the dill and add a drizzle of olive oil, lemon and vinegar. In a dish, arrange the cucumbers, add the yoghurt preparation and mix everything well.
5. Friday: Mozzarella and tuna sandwich at 12€
For laziness to cook or for gluttony, sandwiches can easily tempt us. We suggest you prepare it with tuna and mozzarella and if you don’t like fish or don’t eat it, pick from our selection of recipes.
Ingredients : 2 cucumbers / 1 tbsp. mustard soup / 12 slices of white bread / 2 balls of Buffala mozzarella / 200 g of tuna in slices or pieces / 1 tbsp. tablespoons olive oil / salt, pepper
The recipe steps: Toast the bread then spread a little mustard on it. Reserve 4. Wash the cucumbers then cut them into small pieces. Cut the mozzarella into slices. On the bread, place the cucumbers, a little oil, salt, pepper, mozzarella and finish with tuna. Finally, add bread and cut everything into triangles.
