Which pasta machine to choose? Our readers tested 4: Femme Actuelle Le MAG

Flour, eggs or just a little water… That’s all you need to make the base of fresh pasta! The manufacturing stage – because you obviously have to shape them – is not more complicated, provided you are well equipped. Purists will opt for a manual rolling mill. This timeless utensil allows you to obtain thin and regular dough rolls. Enough to make ravioli pasta, lasagna pasta or all kinds of long pasta: fettuccine, spaghetti, tagliolini… Know that there are now some motorized models, without crank. The 2 rollers then start as soon as the device is powered on. A real saving of time and energy! For a greater variety of shapes, choose extrusion machines, which push the dough through the perforated discs. 2 in 1, they are also equipped with a mixer to mix all the ingredients. With them, you will no longer have any reason not to get started.

What flour to use?

Italian mammas traditionally use durum wheat flour or semolina. Products difficult to find in France. But it is entirely possible to turn to T45 or T55 white flour. Less firm, the pasta will also cook faster.

“A real time saver”

Do you own a KichenAid pastry robot? Transform it into a pasta machine with this kit of 3 accessories consisting of 1 sheeter, 1 spaghetti cutter, 1 fettuccine cutter. These rollers, which attach to the hub of the robot, are activated by its motor sound. A must for easily introducing the dough and catching it on the way out!

Use : From an Italian family, I grew up watching and helping my aunts and my mother make pasta with a rolling pin and manual sheeter, which requires a lot of time and energy. Thanks to this robot and its accessories, we obtain the same result much more easily.

The +: real time saving in the preparation of fresh pasta. We can make a good pasta dish in 10 minutes. Easy to use and above all easy to clean. Very clear explanatory booklet, pasta recipe included, which is very appreciated. Variety of interesting pastas (fettuccine, spaghetti, lasagna).

THE – : the robot is very heavy. It is quite difficult to move if you want to reposition it in order to make pasta (making them requires a lot of space).

My opinion : it is perfect for home-cooking enthusiasts and for those who like to entertain friends or family because it allows you to cook in quantities.

“Usage is extremely easy and intuitive”

Robust and ultra-designed, this Italian designed manual pasta machine is the absolute reference. With its 2 pasta cutters, you can make sheets of lasagna, fettuccine, tagliolini but also many other formats thanks to its range of accessories. To have your hands free, you can also complete it with a compatible motor.

Use : At home, everyone loves fresh pasta. Making them yourself is the assurance of being able to control their composition. I make them in large quantities and store them in the refrigerator so I always have them on hand.

The +: This device is of very good quality. It is space-saving and comes with a small fabric storage bag. The crank turns easily, which is far from being the case with all the rolling mills I have tested. It is easily cleaned with a damp cloth.

THE – : as it is necessary to dry the pasta before cooking or storing it, the acquisition of a dryer quickly becomes essential. It is not supplied with the laminator.

My opinion : This pasta sheeter is very easy to use! The recipe indicated by the manufacturer is well measured. Its price is justified given its solidity.

“With it, I amaze my guests”

The new Philips pasta machine makes fresh pasta effortless in minutes. Its mixer is equipped with a scale that indicates the right amount of liquid to add depending on the type of flour used. And its 10 discs provided offer a wide choice of shapes: penne, shellfish, paccheri…

Use : the machine prepares fresh pasta ready to cook in 10 minutes. It is enough to add all the ingredients, start kneading and collect your homemade pasta. My 6 year old son regularly makes it for the family dinner!

The +: its disconcerting ease and speed of execution. The pasta is delicious. This is the recipe I pull out when I receive dinner after a very late day at work. My guests are impressed every time.

THE – : the absence of a manual program that forces you to follow the process and prevents a little more creativity and customization. Cleaning the discs after use is quite restrictive.

My opinion : a significant help to facilitate home cooking and avoid industrial dishes. Just one piece of advice: invest in good flour!

“It is very stable thanks to the clamp”

In just a few turns of the crank, make your lasagna sheets, fresh tagliatelle and spaghetti using this very accessible rolling mill. It is easily adjusted to obtain a homogeneous and regular dough of the desired thickness.

Use : it’s very satisfying to create your own pasta. With a rolling mill, the operation is less tedious than with a roller!

The +: it is very easy to assemble and attach to the table. Its use is instinctive. Everything is well explained in the instructions. It feels sturdy and built to last. he is also very easy to clean.

THE – : you have to get the hang of it.

My opinion : I loved using this rolling mill, the homemade pasta, what a delight! I would like to test it again to make lasagna or pasta large enough to cook in Asian recipes.
