The fondue made from 100 percent Vorarlberg cheese, which was developed especially for the restaurant by the traditional company Alma, impresses with the house blend of mountain cheese, Emmental and Gruyère. There is also fine champagne from Laurent Perrier. “We all agree on one thing: you can taste quality. “High-quality, hand-made cheese directly from the mountain dairyman has an immensely wide variety of flavors,” says Daniel Marte, CEO of Alma. “To achieve the smooth and creamy texture typical of a cheese fondue, it is all about the mixture. The right proportions of cheeses create the perfect taste.” The Bootshaus team has come up with a completely new fondue variation as a suitable dessert: a warm, creamy vanilla sauce in a fondue pot into which chocolate-almond tarts, bundt cakes, cinnamon churros and fresh fruits are dipped.Mysterious originIncidentally, there is no other national dish’s origin as mysterious as that of cheese fondue. Whether it was mountain farmers who dared to experiment with culinary experiments in their isolation from the outside world, or monks who wanted to circumvent the fasting rules with melted cheese – these stories have so far been considered mere legends.
