With story & recipe – passionate mushroom pioneer

The Ammerhauser is one of the best seminar hotels in Austria. This is also due to the experimental chef. He was about the first to give Shii-Take-Mushrooms from Obertrum a chance.

A man of character! In 2006 Gert Seebauer became head chef at Ammerhauser, which was and is known as a top seminar hotel. It is not for nothing that Anthering’s institution has been voted Austria’s number one in this category six times, most recently in 2020.

But back to Mr. Seebauer: “He leaned far out of the window during the job interview,” remembers owner Maria Ammerhauser. “He said he only comes if he can keep his suppliers. I swallowed! ”

Argentina beef, Thai prawns, Spain peppers? Even then, the Upper Styrian didn’t play along. Consequence: conversion to regional, if possible organic products. Andreas Eibl’s delicious, nutty organic Shii-Take mushrooms from Obertrum were recently added to the menu as the first restaurant. The meat – with the exception of pork – comes exclusively from Salzburg, such as the Tauern lamb.
