Potato soup – the basic recipe is great to vary

Potato soup is the best proof that the simple things are often the best: Potatoes, onions, soup greens, leeks, broth, cream, a few herbs and spices, that's all it takes for a potato soup. And it can be varied so well, because potato soup tastes good with all kinds of toppingswhether classic with sausages or fine with crabs. Paprika strips, soup vegetables, leeks, carrots or fried mushrooms make potato soups good for vegetarians, and those who like it hot can season their potato soup with Tabasco or wasabi.

Creamy potato soup, spiced up with salmon or bacon, is particularly popular in the colder months of the year. Put in a few croutons – and you're done! Meat lovers like our simple potato stew with coarse pieces of potato and smoked pork loin. And when a visit has been announced, our potato soup with beetroot salad serves as an eye-catcher. It is quick to prepare and can be served in small glasses as a starter.

Potato soup: which potatoes are the right ones?

Floury boiling Potato varieties, for example Adretta, Likaria or Aula, are best for potato soups. And so that the potato soup is nice and creamy, first cook the potatoes, then chop them up with the potato masher and briefly with the hand blender or turn them through the "brisk Lotte". Caution: Do not puree with the hand blender for too long, otherwise the potato soup will be sticky.

Then simply add carrots, onion and vegetable stock and garnish with parsley – you only need a few high-quality ingredients for a good potato soup. But with our recipes it is guaranteed to taste like grandma's!
