Where does the croziflette come from?

Crozets were born in Haute-Tarentaise, on Savoyard territory, in the 17th century. Formerly nicknamed "the poor man's dough", crozets are essential on the plates of Savoyard homes, and replace the potato, an indestructible figure of the tartiflette. Crozets take their names from a word from the Savoy dialect "croé" which means "small", just like the number of ingredients it takes to make them: buckwheat flour or wheat flour, eggs, water and salt. That's all you need to let yourself be tempted by these original and delicious little pasta. On the other hand, you will need to arm yourself with patience and dexterity to make the small squares.

The real Beaufort croziflette recipe

To make this Beaufort croziflette recipe, you will need the following ingredients:

  • 300 g crozets
  • 200 g bacon
  • 100 g of Beaufort
  • 1 onion
  • 20 cl of fresh cream
  • salt pepper

Cook the crozets in boiling salted water for about 10 minutes. While the crozets are cooking, brown the bacon in a pan with the chopped onion. Add the crème fraîche, once the bacon and onion mixture is well cooked. You can, if desired, sauté the onions and bacon in a small volume of dry white wine to flavor the food. Drain and pour the crozets into the bottom of a gratin dish, and then add the bacon, onions and crème fraîche preparation. Finally, place the strips of Beaufort on all the preparation, to completely cover it, and put your dish in the oven for 20 minutes at 180 °. Now is the time to taste your Beaufort croziflette. Enjoy your meal !

How to make a croziflette in the pan?

You simply add the crozets to the pan where you prepare the bacon and onions, then pour the crème fraîche, and add the cheese of your choice (reblochon or beaufort). All you have to do is wait for the cheese to melt and completely cover the preparation. Good tasting !

Our tips for making a vegetarian croziflette

To make a vegetarian croziflette, you can replace the bacon with mushrooms, tofu, eggplant or cauliflower. You can also make a vegetarian leek croziflette. The recipe for croziflette is so simple and quick to make that it can be adapted to all diets. Be inventive, and try to make your own croziflette recipes !

Express, our croziflette recipes in a food processor

The recipe for the croziflette au vin with Cookeo®: Slice the onion, and cut your cheese into pieces. In the Cookeo® tank, brown the bacon and onions with the "brown" function. Add 10 cl of dry white wine, and let brown for 2 min more. Then pour the crozets, the water (800 ml), the crème fraîche and the pieces of cheese. Salt, pepper, and start cooking under pressure for 8 minutes.

The recipe for the Thermomix® croziflette: Put 1.5 kg of water in the Thermomix®, and cook for 10 minutes, at 120 °, speed 1. Add the crozets, cook for 18 minutes at 90 °, always on speed 1. Once the crozets are cooked, drain and place them in a gratin dish. Preheat your oven. In the Thermomix®, place the onion cut in 4, and mix for 5 seconds, speed 5. Then add the bacon and cook for 4 minutes at 120 °. Add the crème fraîche, white wine (optional), salt and pepper, and cook for 2 more minutes. Place your preparation in the gratin dish with the crozets, add the cheese of your choice (reblochon or beaufort), and cook for 20 minutes at 180 °.
