The “baked oatmeal” trend has finally made it into German kitchens. After countless oatmeal and porridge dishes, we are now enthusiastically discovering the preparation form as a casserole for our everyday lives – especially if we have children.

The basic ingredients for baked oatmeal dishes are of course oat flakes, milk (or a plant-based alternative) and a sweetener of your choice (we recommend honey or agave syrup). Depending on the recipe, a binding agent, such as eggs, is often added. It is then rounded off and varied with various nuts, fruits or chocolate pieces.

The following ingredients are necessary for our vegan version.

Vegan breakfast casserole with fruit

Ingredients:

Preparation:

  1. Preheat the oven to 180°C top and bottom heat.
  2. Puree a peeled and ripe banana and put it in a small baking dish as a base.
  3. Mix in the ground almonds and oats and then add some ground vanilla, a pinch of salt and the milk. Finally, stir the cocoa powder and half of the chocolate drops into the casserole and mix everything well.
  4. The fruits of your choice are added to the mixture as a topping together with the remaining chocolate drops.
  5. Bake the casserole in the oven for 20 minutes and best serve it warm. Bon appetit!

By the way: If you like to cook your breakfast in advance for the week, you can also prepare different variations in smaller casserole dishes. Depending on your taste, the small shapes can be warmed up again before consumption and offer a varied, filling and healthy breakfast for the whole family every morning.
