Baking bread without yeast: 3 delicious recipes

The ingredients for bread without yeast

Instead of yeast, we use baking soda and buttermilk for our walnut bread. You need the following ingredients:

  • 100 g walnuts
  • 450 g wholemeal spelled flour
  • 2 tsp soda
  • 2 tsp salt
  • 500 ml buttermilk

Bread without yeast – the preparation

  1. Preheat the oven to 200 degrees, fan oven 180 degrees, gas level 4.
  2. Finely grind 80 g walnuts in a blender, roughly chop the remaining nuts. Sieve the flour and add the remaining bran in the sieve to the flour. Mix the ground and chopped walnuts, baking soda and salt into the flour.
  3. Make a depression in the middle and pour in the buttermilk. Knead the ingredients quickly with a wooden spoon into a soft, slightly sticky dough. Add a little more flour if necessary.
  4. Shape the dough into a round loaf and place on a baking sheet lined with baking paper. Cut a cross in the middle with a knife. Bake the bread without yeast in the oven on the middle shelf for about 30–40 minutes and then let it cool on a wire rack.

Bread without yeast and flour

Ingredients:

  • 150 g sunflower seeds
  • 100 g crushed flax seeds
  • 60 g pumpkin seeds
  • 70 g toasted sesame seeds
  • 30 g linseed (with dates & plums, e.g. from Schneekoppe)
  • 30 g psyllium husk
  • 20 g chia seeds
  • 20 g chia flour
  • 1.5 heaped teaspoons of sea salt
  • 2 tbsp hemp sauce (with oil; health food store; or Tahini)
  • 1 tsp beet syrup (or honey)
  • 300 ml lukewarm water

Preparation:

  1. Mix all dry ingredients and the salt in a bowl. Mix the hemp sauce and syrup with 300 ml of lukewarm water, add this mixture to the seeds and stir vigorously with a spoon until everything has combined to a compact mass.
  2. Place the dough in a box (25 cm long) lined with baking paper, smooth out with a spoon and press firmly. Leave the bread without yeast for at least 2 hours, better overnight, at room temperature.
  3. Preheat the oven to 180 degrees, fan oven 160 degrees, gas level 3.
  4. Bake bread in the preheated oven on the 2nd rail from below for about 30 minutes. Then take out, carefully drop out of the mold onto a baking sheet lined with baking paper. Remove the baking paper from the bread. Put the bread back in the oven and bake for another 30 minutes until it is crispy.
  5. Remove the bread without yeast from the oven and let cool completely on a wire rack.

Bread without yeast: beer bread

If you like, you can also bake bread with beer and baking powder. This tastes great, for example, as a side dish for grilling.

Ingredients:

  • 500g flour
  • 1 P. baking powder
  • 0.5 tsp salt
  • 1 tsp sugar
  • 330 ml beer
  • 100 g butter

Preparation:

  1. Mix the flour, baking powder, salt, sugar and beer in a bowl and mix to a homogeneous dough.
  2. Put the dough in a box. Warm the butter and pour half of it over the bread.
  3. Bake the bread without yeast at 200 degrees for about 40 minutes. After 20 minutes pour the other half of the butter over the bread.
