Honestly! Who doesn’t love waffles? Whether at the weekend for brunch, as a dessert or even in the home office as an ideal afternoon snack (also very tasty for the office, cold, in the lunch box). No matter when and where – waffles always taste good everywhere! Soft on the inside, crunchy on the outside and that sweet smell, mhhh… But best of all: They are ready in a flash and can be easily spiced up with lots of delicious ingredients. Sometimes with berries, sometimes with powdered sugar or even with ice.

Recipe: 5-ingredient coconut waffles

The ingredients for about 8 waffles:

  • 220 g spelled flour
  • 1 tbsp baking powder
  • 2 organic eggs (L)
  • 400 ml can of organic coconut milk
  • 80 ml coconut oil, melted (+ 2 tsp for greasing)

Options:

  • 60 g grated coconut
  • For really sweet coconut waffles, simply add 2 tablespoons of sugar or coconut blossom sugar

Preparation:

  1. Mix the flour and baking powder with a whisk. In a separate bowl, mix the eggs, coconut milk, coconut oil and coconut flakes (optional) with a whisk and then mix everything together well in a bowl.
  2. Leave the 5-ingredient waffle batter to stand for around five minutes.
  3. Depending on your taste, the preheated waffle iron can be brushed with 1 tsp coconut oil (this way the coconut waffle will be nice and crispy). Then put about 3-4 tablespoons of batter in the middle of the preheated waffle iron and bake until the waffle is golden brown. Now it can be served.
  4. If you want really crispy waffles, use a clothespin to attach them to a ribbon after baking and let them cool slightly. This way the pastry will be nice and crispy.

Tip: You can optionally serve the waffles on the plate with coconut chips, ice cream or shavings. The coconut-chocolate variant is also very tasty: dip the waffle in couverture and sprinkle with grated coconut.
