  1. Rinse the jars and lids with hot water so that they sterile are. Then you dry them off.
  2. Wash the gooseberries, drain them and remove all the stems and leaves. You can also use the berries pierce individually with a needle, this prevents them from bursting open later. With a kilogram of berries, however, this step is very tedious and is particularly worthwhile if you have the gooseberries later for decorative purposes, for example as a cake topping.
  3. Next, put the fruits in the mason jars. Make sure that you are about to the edge two centimeters of space leaves.
  4. Now you make the sugar syrup: bring the water to a boil in a saucepan and mix the sugar. With constant stirring let the water boil until the sugar has completely dissolved.
  5. Now pour the sugar solution over the gooseberries so that it are completely covered. You can wipe the preserving jars again with a cloth so that they are not sticky, and then with the lid screw tight.
  6. The next step is to put the jars in a saucepan and fill them with water until the mason jars three quarters are in the water. Then let it simmer for 30 minutes at a boiling temperature of 75 degrees.
  7. Finally, take the pot off the stove and let the glasses cool down overnight. The gooseberries are boiled down stable for about a yearif they are stored cool and dry.

Boil gooseberries in the oven: how it works

Alternatively, you can boil the gooseberries in the oven. Steps 1-5 remain the same. After the jars are closed, you can put them in one Pan or casserole dish with a high rim and fill in about two centimeters of water.

Heat the oven to 80 degrees and leave the glasses boil down for about half an hour. If bubbles form, you can turn off the oven and let the gooseberries cool in it.

In general, it doesn't matter whether you want to boil ripe gooseberries or choose the unripe, green berries. The disadvantage of ripe fruit is that when it is boiled down lose their color and aroma more quickly. Because they are not as firm as the unripe gooseberries, their cooking time is only 20 minutes.
