Breading without an egg – is that even possible?

With classic breading, the meat or other fried food is first turned in flour, then pulled through whisked eggs and finally rolled in breadcrumbs. The egg has a binding function that ensures that the crust does not peel off. But how do you proceed if, for example, you cannot tolerate eggs, are vegan or simply have no eggs in stock? We explain which ingredients you can use to make breading instead.

Bread without eggs: dairy products as an alternative

If you want to bread without an egg, you can instead use dairy products such as Cream, condensed milk or yogurt use. But conventional milk is also a good substitute for eggs. You should season the liquid with a pinch of salt, then you can turn the fried food in flour as usual and then dip it in the liquid. Finally, the schnitzel – or another food – is breaded in breadcrumbs.

Tip: You can mix the crumbs with some grated hard cheese, then the breading sticks even better and you get a spicy crust at the same time. For a thick breading it is sometimes necessary to cook the food to turn in flour and liquid a second time. Mustard is also often used instead of eggs for breading, but you should note that the meat no longer has to be seasoned so strongly.

Bread without eggs: the vegan option

If you are vegan and want to bread vegetables or tofu, for example, you can use it as an egg substitute one tablespoon of flour with three tablespoons of water and a pinch of salt stir. The mixture should have a creamy consistency. Then the vegetables are dipped in the liquid and then rolled in breadcrumbs or breadcrumbs. Very tough vegetables should be cooked briefly in advance and may have to be breaded twice – then nothing stands in the way of a delicious celery schnitzel!

If you want to bread tofu, it is advisable to leave it some time before preparation to express it so that it contains less liquid. The best thing to do is to wrap it in kitchen paper, put it on a plate and place another plate on top, which is weighed down with an object. This way the breading will hold better later.
