VSn Wednesday morning, the mist envelops the small port of Lauzières, in the town of Nieul-sur-Mer, north of La Rochelle. Only a few rays of the sun succeed in breaking through, putting a spotlight on these marshes dotted with clear. This small oyster port frequented by tourists in summer, located at the foot of the Ile de Ré bridge, seems to be sleeping well on this first day of winter. At least in appearance. As soon as you push open the door of one of the cabins on rue du Port, the excitement is there. A few days before Christmas Eve, it’s the rush among these small oyster farmers, like their neighbors in the Marennes-Oléron basin.
