Chicken with dynamite sauce, the simple and slightly spicy recipe from a former winner of “Top Chef”: Femme Actuelle Le MAG

If you like chicken and spicy flavors, then this recipe is for you! The former winner of Top Chef Mohamed Sheikh invites us to revisit chicken breasts. After marinating them in a mixture of oil and spices, he coats them with a tempura batter before frying everything. The trick? There mayonnaise which accompanies these deliciously crispy little donuts is enhanced with chili sauce. It’s the little extra that changes everything! Everyone will be free to dose the quantity of chili in this explosive mayo, according to their sensitivity to spices!

The recipe for chicken with dynamite sauce

For this recipe for 3 people, start with prepare the marinade : cut 300 g of chicken fillet into cubes and place them in a salad bowl. Sprinkle lightly with flour, season with salt and pepper, add 1 teaspoon of paprika1 teaspoon ofgarlic powder1 teaspoon of ginger powder and drizzle everything with olive oil. Leave everything to marinate.

Meanwhile, prepare the sauce: in a bowl, mix 3 egg yolks with 60 g of mustard, 1 drizzle of lemon juice and a little salt. Gradually whisk with around 50 cl of olive oil, to obtain a mayonnaise. Then incorporate 185 g chili garlic sauce and reserve.

Prepare the tempura batter : pour 100 g of flour and 100 g of cornstarch into a salad bowl, and mix with half a sachet of baking powder and a little paprika. Pour 15 cl of sparkling water then add 2 egg yolks and mix with a whisk.

Coat the marinated chicken breast cubes with a little flour then pass them in the tempura batter. Heat some frying oil in a wok or large saucepan and add the chicken pieces. Cook for a few minutes until they are golden brown. then remove them using a slotted spoon.

Place the chicken in a salad bowl and coat with spicy mayonnaise sauce.

Arrange a bed of arugula on each plate, arrange the chicken tempuras on top, sprinkle with chopped chives and seeds of black sesame and enjoy!

As always, use quality products! Avoid the first prices and choose breasts from free-range chickens.

To make the tempura batter, use very cold sparkling water. This is the guarantee of obtaining crispy and fluffy donuts!
