Ingredients for 4 persons :
- 1 kg of carrots
- 1/2 red onion thinly sliced
- 100g green lentils
- 100 g of lamb’s lettuce or watercress
- 120g goat cheese
- 50ml milk
- 4 tbsp oil
- 1 tbsp of vinegar
- A few sprigs of thyme
- Salt and pepper
Achievement :
1. Wash and peel the carrots. Cut them in half or in quarters if they are large. Put them on a baking sheet, drizzle with 2 tbsp of oil and sprinkle with salt, pepper and thyme.
2. Mix and cook in a preheated oven at 180°C for 30 minutes.
3. Pour the lentils into a saucepan, cover with cold water and bring to a boil. Salt and cook for 20 minutes. Drain and pour into a salad bowl. Add 2 tbsp of oil and 1 tbsp of vinegar and let cool.
4. Mix the goat cheese with the milk, pepper and the rest of the thyme to obtain a creamy sauce.
5. Mix carrots with lentils, onion rings and lettuce leaves.
6. Divide among plates and pour the goat cheese sauce.
