The melted Reblochon and grilled bacon bring just the right dose of comfort which everyone needs at the end of the weekend.

If you have leftover Reblochon cheese and a few slices of bacon from Friday night’s raclette party, you have everything you need to make a Savoyard croque monsieur. It’s delicious and easy to preparein short, you no longer have an excuse not to enjoy yourself at the end of the weekend!
The list of ingredients for 4 people:
- 8 slices of a ball of country bread
- 16 slices of bacon
- 2 onions
- 1 tablespoon of sugar
- 1 Reblochon
- 4 tablespoons of thick crème fraîche
- 1 tablespoon of mustard
- fresh flat-leaf parsley
- salt pepper
The steps of the recipe:
- Start by chopping the onions and brown them over medium heat in a pan with a knob of butter. When the onions are translucent, deglaze with balsamic vinegar. Add a tablespoon of powdered sugar.
- Then cut your reblochon in 2. Slice one half into slices and the other into small cubes.
- In a bowl, mix the heavy cream with the mustard. Season with a little salt and pepper.
- Preheat the oven to 200°C.
- Then place 4 slices of bread on a baking tray covered with parchment paper. Generously spread your cream-mustard mixture on top. Place a little caramelized onion, two slices of bacon per croque monsieur, two slices of reblochon cheese and close with another slice of bread. Finish by brushing the top of your croque monsieur with the cream-mustard mixture and sprinkle with diced Reblochon cheese and chopped parsley.
- Bake for 10 minutes at 200°C.

We often opt for sandwich bread, but that’s not the best option when we want crispy croque monsieurs. Instead, focus on a good country bread with slices neither too thick nor too thin.
