Eat well for not (too) expensive? Three easy-to-make student recipes

Improvising yourself as a chef when you are a student is a headache: you have to find recipes that are quick to make, economical, satisfying, to be made with a minimum of accessories. Sylvia Gabet, former Gault & Millau food critic who became author of (successful) cookbooks, has tackled the task with Broke and greedy. Student special (Ed. de la Martinière, 2013).

Each apparently simple recipe circumvents the constraints of young cooks. The salmon soup is a trick for cooking fish without an oven, the club sandwich is easy to make and stuffed with vegetables and the giant chocolate cake lasts several days.

For 2 people

Preparation: 5 minutes

Cooking: 15 minutes

Ingredients :

  • 1/2 packet of rice noodles (125 g)
  • 3 spring onions
  • 1 knob of ginger
  • 2 zucchini
  • 1/2 chilli (or 1 pinch of wasabi paste)
  • 3 sachets of miso soup (if not available, 1/2 vegetable stock cube)
  • 250 g fresh salmon fillet without skin (if frozen)
  • 1/4 packet of bean sprouts (50 g)
  • 1 tbsp. olive oil
  • salt

Boil water in the saucepan, place the noodles in the bowl and cover with boiling water and a little salt. Place a plate as a lid and let rise for 8 to 10 minutes.

Meanwhile, sauté the chopped new onions (reserve the green of an onion for the final garnish) and the peeled and chopped ginger in the pan with the olive oil. Add the washed and diced zucchini, the half-chili and brown everything, stirring for 5 minutes.

Add the miso soup sachets, pour 60 cl of hot water and bring to the boil.

Cut the salmon into cubes (defrost in the microwave or at room temperature one hour before if necessary) and arrange on the plates.

Add bean sprouts, cooked noodles and pour boiling soup over them. Add reserved onion sprouts.

  • 4 eggs
  • 8 slices of bread
  • 1 punnet of spreadable cream cheese of 150 g
  • 8 thin slices of smoked bacon
  • 4 tomatoes
  • 4 lettuce leaves
  • 4 slices turkey ham (or leftover cooked chicken)
  • salt pepper
