Freezing mushrooms: instructions, tips and tricks for freezing.

In autumn it's mushroom season again! For those who can't get enough of them, we explain what to watch out for when you want to freeze mushrooms.

Step 1: clean the mushrooms

First, you'll need to clean the mushrooms before you can freeze them. The best way to do this is to use a brush or kitchen paper. Mushrooms should under no circumstances should be washedbecause they absorb the water and thereby lose their aroma. Since the mushrooms are mushy after defrosting, it is advisable to chop them up beforehand.

Step 2: blanch mushrooms (optional)

Mushrooms or porcini mushrooms can easily be frozen raw. Chanterelles, on the other hand, should be blanched beforehand because they otherwise taste bitter after defrosting. To do this, boil the mushrooms in salty water for a minute and add a dash of lemon juice. Then the mushrooms need to dry.

Step 3: shock freeze mushrooms

Shock freezing is also not necessarily necessary but makes portioning easier later the mushrooms and prevents them from sticking together. To do this, place them individually on a baking sheet lined with baking paper and place this in the freezer.

Step 4: freeze mushrooms

After two hours, you can put the pre-frozen mushrooms in freezer bags, seal them airtight and freeze the mushrooms. They're in the freezer Keeps for ten to twelve months. Frozen mushrooms can be used directly later, but you should not thaw them at room temperature, but heat them directly in the pan while they are frozen.

Freezing mushrooms: season and storage

Fresh mushrooms can only be kept in the refrigerator for about five days. If they turn slightly brown, you can put the top layer on the mushroom head peel off with a knife.
