The purpose of the Petit Épeautre du Velay association is to bring together all the players in the sector in order to develop the production of this ancestral cereal on the Vellaves lands.
“It consumes little water and inputs. Its hardiness makes it a disease-resistant and regular production for its yield. With the growing greening of French plates, this cereal perfectly meets current societal expectations. The outlet is therefore there for a long time and promises price stability,” explain the officials.
So much so that now, every year, production doubles and will continue to grow strongly. With this in mind, a process to obtain the PGI (Protected Geographical Indication) is underway.
