Candlemas is originally a pagan festival later taken over by Christians. The base of the pancake batter recipe

Each pancake batter recipe has its little differences. Your grandfather, for example, doesn’t make pancakes the same way as your cook friend or your sister. However, for complete beginners, here is an extremely simple pancake batter recipe. For this you need:

– 300 g wheat flour
– 3 tablespoons of powdered sugar
– 2 tablespoons of rapeseed oil
– 50g melted butter
– 60 cL semi-skimmed or vegetable milk
– 5 cL of rum (optional)
– 3 whole eggs

It is important to start by mixing the dry ingredients evenly (flour and sugar in this case). Then, gradually pour in the rapeseed oil, then mix. Same thing for butter and milk. If you don’t like rum, you can substitute orange blossom. Or put nothing and leave a natural taste. Then add the eggs, making sure the whites and yolks are mixed evenly as well. Leave the dough to rest for a while, covering it with a clean kitchen towel. Then butter a non-stick pan. Pour in a ladle of batter and repeat the operation until your bowl is empty. Remember to scrape the edges of the bowl well with a spatula so as not to waste any leftover pancake batter.

Samosa pancakes with pears

In your pancake batter, put:

– 335 g of flour
– 50 g caster sugar
– 2 whole eggs
– 35g of melted butter (sweet or salted, as you prefer)
– 65 g semi-skimmed milk (or vegetable milk)
– 10 cL of water

Mix the dough well so that there are no lumps. Let it rest, covering it with a towel. Meanwhile, prepare the pear compote. Peel two ripe pears, reduce them over low heat in a pan with a little butter or cut them into pieces and mix the fresh pear pieces with the pear compote. This preparation will be used to garnish the pancakes once cooked and rolled into small triangles. Do not hesitate to hold your samosas with toothpicks.

Crêpes with chestnut flour and Nutella

In your pancake batter, put:

– 50 g wheat flour
– 125 g of chestnut flour
– 1 pinch of salt
– 25 cL of semi-skimmed or vegetable milk
– 1/2 tablespoon of rapeseed oil
– 2 eggs

Mix this mixture well so that there are no lumps. Once mixed, let the dough rest, covering it with a clean kitchen towel. Pan-fry your pancakes and top them with Nutella or the spread of your choice.
