Bees and flowers – a symbiosis that is millions of years old and from which humans have also benefited for thousands of years. In addition to honey, we also have the bees to thank for products such as wax or propolis. However, we should also give something back to the hard-working workhorses as a thank you, believes herbal expert Miss Green. In her new book “Fräulein Grüns Bienenapotheke” (available from July 20, Servus Verlag), she shares knowledge and recipes about bee products and bee-friendly herbs. Here are three healing recipes from the Bee Pharmacy.

Honey ice cream with hyssop

In addition to its healing effects, honey is also a luxury food and honey is becoming increasingly popular for ice cream. Basically, this recipe can be combined with any herb that you know. Hyssop gives the whole thing a slightly bitter taste. For those who don’t like it too sweet.

Ingredients: 80 g sugar, 130 ml water, 1 handful of hyssop herb with blossoms, 200 g curd cheese, 200 g natural yoghurt, 40 g honey

Preparation: Boil the sugar in the water, dissolve and allow the sugar syrup to cool. Then add the hyssop and mix everything with a blender.

Now either leave the mixture in the fridge for a few hours or, if you want it to go faster, put it in the freezer for 30 minutes. After this cooling time, strain everything, then add curd cheese, yoghurt and honey to the hyssop syrup. Now the mass is ready to be filled into the ice cream machine. If you don’t have an ice cream maker, just let it set in the freezer.

Red clover power balls

Energy balls or muesli balls are made in a few minutes and are a healthy candy that tastes young and old. The balls can be eaten as a snack between meals, but they also go well with breakfast muesli with milk or yoghurt. These little powerhouses relieve the sugar low, especially when you are hungry.

Ingredients for about 15 balls: 2 teaspoons pollen, 5 red clover heads, 5 dates, 5 dried apricots, 1-2 tablespoons water, 50 g grated hazelnuts

Preparation: First, the pollen is ground into a fine powder. This works very well in a mortar.

Then pluck the flowers from the red clover and mix with the remaining ingredients in a food processor or blender to a sticky mass. It is best to wet your hands and shape a heaping teaspoon of the mixture into balls.

Then roll them in the pollen and place them on a plate. The balls will keep in the fridge for a week.

Rosemary Sultan Paste

The recipe comes from oriental naturopathy and supports memory. Rosemary is added to this tried-and-tested recipe, which promotes concentration. In addition, the mixture has a flushing and slightly diuretic effect and supports the body in getting rid of toxins.

Ingredients: 1 tbsp ginger powder, ½ tbsp cinnamon powder, 1 tbsp ground frankincense, 1 tbsp crushed rosemary needles, 1 tsp brown sugar, 1 tsp rock salt, 1 tsp ground black pepper, 1 tbsp olive oil, 1 kg honey

Preparation: All the ingredients are added to the honey and stirred. Now the herbs and spices should leave for two to three days.

One teaspoon of the paste should be taken daily, either in the morning or evening. But don’t swallow it, let it melt under your tongue so that all the active ingredients can be absorbed through the mucous membranes.
