Do you remember kombucha? We’re reviving the 2022 tea trend – and conjuring up three delicious drinks from it, which will also give us new vitality.

Around 20 years ago, a new pet moved into many apartments. Adults cultivated it meticulously, children watched with wide eyes as it grew: the kombucha mushroom. He was also called Scoby and, like Herrmann, was passed from house to house.

Now Scoby is back. Today we are mainly talking about the products: Kombucha tea is now available in bottles in numerous organic shops and supermarkets. But you can just as easily make it yourself at home – after all, fermenting is not only a fine activity, but is also becoming an absolute trend hobby again. And that’s exactly what happens when the drink is made: yeast and bacteria are at work and secretive and ferment the tea they encounter. The result is a fermentation drink whose metabolic products are said to have a positive effect on health.

Above all, Kombucha tastes interesting – slightly sour-sweet and so different that it is guaranteed to awaken our spirits – and is a wonderful alternative to common lemonades. get an appetite? We present three variants in which the old acquaintance appears in a new guise. You don’t need many ingredients to make Kombucha drinks, but you always need one essential one – the mushroom. Either you ask those close to you whether someone has a piece for you (similar to Herrmann dough, you can simply pass the mushroom on) or you do research on the internet. You can also buy the Kombucha approach in organic shops and health food stores. It is important during the whole process and even during procurement: hygiene is the top priority in fermentation processes, so that only the “good” bacteria really work and no contamination, for example with mold, takes place. So always take a good look at the kombucha, it should not smell bad, have a shiny surface and look clean.

Classic kombucha recipe

Ingredients:

  • 1 kombucha mushroom
  • 150ml kombucha liquid
  • 1 liter of black or green tea
  • 90g (cane)sugar
  • 1 large jar about the diameter of the kombucha mushroom

Preparation:

  1. Boil 1 liter of water, add the desired strength of tea (about 3 teaspoons). Leave for 15 minutes.
  2. Add 90 grams of sugar to the tea and dissolve. Let cool down.
  3. Put the kombucha mushroom and liquid in a disinfected container and pour the tea over it.
  4. Close the jar with a clean kitchen towel and a rubber ring so that the tea can breathe.
  5. Put the tea in a warm place (around 21 degrees) and don’t move it for ten days.
  6. Ready! Pour into bottles and store in the fridge. Make sure that the screw cap is never completely closed, as more carbon dioxide can form.

A leftover kombucha can always be kept and used for the next batch. The basic recipe can be refined and modified as desired with different types of tea. For example with these ingredients:

3 kombucha recipes from mate to lavender

Lavender Hibiscus Kombucha

Ingredients:

  • 1 kombucha mushroom
  • 150ml kombucha liquid
  • 1 liter of hibiscus tea
  • 1 tsp lavender flowers
  • 90g cane sugar
  • 1 large jar about the diameter of the kombucha mushroom

The approach works the same, but in this case you boil the tea with hibiscus tea and lavender blossoms and let it steep for 15 minutes. After that the procedure is repeated.

Herbal Kombucha

Ingredients:

  • 1 kombucha mushroom
  • 150ml kombucha liquid
  • 1 liter of water
  • 3-5 teaspoons of mountain herbal tea
  • 90g (cane)sugar
  • 1 large jar about the diameter of the kombucha mushroom

In this case, mountain herbs are used as the basis for the tea. It can be any mixture, the tea should also steep well for 15 minutes. Then sweeten and stick to the original kombucha recipe.

Mate Turmeric Kombucha

Ingredients:

  • 1 kombucha mushroom
  • 150ml kombucha liquid
  • 1 liter of mate tea
  • 1 teaspoon fresh turmeric
  • 90g (cane)sugar
  • 1 large jar about the diameter of the kombucha mushroom

For the mate infusion, depending on the desired strength, pour three to five teaspoons of mate tea with one liter of boiling water. If you like, you can add slices of fresh turmeric. Steep for 15 minutes, allow to cool and prepare according to the Kombucha recipe.

Warning: Kombucha tea may contain alcohol as a result of the fermentation process.
