Fresh ginger has a thin, smooth skin and firm flesh. The best way to peel ginger is with a potato peeler. Then cut the ginger into slices with a sharp knife, then into sticks and finally into cubes. With the help of a ginger grater or another grater, the tuber can be minced particularly finely.
