It doesn’t always have to be cheese and potatoes. These creations add variety to the raclette pan.

Raclette and New Year’s Eve simply belong together. The turn of the year is celebrated festively with grills and pans before they give way to champagne glasses at midnight. Traditionally in Switzerland, potatoes, pickles and pearl onions are served with the melted cheese. However, these culinary temptations bring some variety to your own raclette buffet.

Mediterranean raclette starters

Important: Before you start topping, the dough must be put under the raclette grill once so that it can bake completely. Once it has risen and turned a light brown, top it with your favorite ingredients.

It works equally with tarte flambée. This dough is also available in the store in ready-made form. Zucchini, goat or feta cheese taste just as good on it as sour cream, bacon and spring onions. Particularly aromatic: Drizzle the tarte flambée with honey after baking.

Fish fans will also get their money’s worth on New Year’s Eve with a combination of fish fillets or shrimp, mango and feta: To do this, cut the fish fillets or shrimp into bite-sized pieces and first fry them on the grill for a few minutes. Put the pieces in the pan, add the mango, oregano and feta and grill. This fruity-sweet combination can also be prepared with tofu or meat. So if you don’t like fish, you can replace it with another savory ingredient.

A vegetarian variant is creamy cheese spaetzle from a pan. The spaetzle can either be prepared yourself or bought fresh. To do this, place the spaetzle in the pan and sprinkle with various types of cheese. If you like, you can also add a little butter to the pan for a particularly hearty taste. Bake under the raclette grill until golden brown until the cheese has melted. Garnished with fresh herbs or fried onions, you can create a hearty delicacy like from a tavern.

Raclette: Sweet ending

The raclette oven is also suitable for preparing desserts. How about an apple crumble, for example? To do this, cut an apple into thin slices and sprinkle with lemon. For the streusel, mix butter, sugar, flour and cinnamon until you have a crumbly consistency. Then place the apple slices in the pan, crumble the streusel over them and bake everything until it is golden brown. If you like, serve a scoop of vanilla ice cream with it.

Once the dough is prepared, you can even bake pancakes in the small pans. For ten servings, mix 220 milliliters of milk, 220 grams of flour, three eggs, two tablespoons of sugar and 30 grams of melted butter until smooth and refrigerate until the evening. Then put two tablespoons of dough in each raclette pan, garnish with berries, banana slices or chocolate and bake for about ten minutes.

A chocolate fondue with fruit works just as well in a pan. This is a particularly enjoyable way to celebrate the sweet end of a raclette meal: place any amount of chocolate in one of the pans and let it melt. Cut fresh fruit such as strawberries, pineapple pieces or grapes into bite-sized pieces and dip into the melting chocolate.
