The list of ingredients for 6 large cookies:

  • a little pistachio spread or pistachio cream
  • 120 g unsalted butter, cold
  • 100g light brown sugar
  • 100g caster sugar
  • 2 teaspoons of vanilla extract
  • 1 egg
  • 1 egg yolk
  • 280 g plain flour
  • 2 tablespoons of corn flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 200 g chopped chocolate (here the cook uses dark chocolate, but white and milk chocolate work too)
  • 80 g lightly chopped pistachios

The steps of the recipe:

  1. Start by placing 6 tablespoons of pistachio spread on a baking sheet covered with parchment paper. Leave everything in your freezer for at least 30 minutes.
  2. While the spread hardens, mix the cold butter, sugars and vanilla in a large bowl. Beat them together for 5 minutes. Then add the egg and egg yolk.
  3. In another bowl, mix the flour, cornmeal, baking powder and salt. Pour everything into your butter-egg mixture. Crush the chocolate and pistachios and add them as well. Mix everything together until you no longer see flour.
  4. Divide this dough into 6 pieces, each piece of dough should be approximately 150 g. Collect one of the pieces of cookie dough, flatten it, then add a piece of hardened pistachio spread to the center. Form a nice ball, making sure that the pistachio spread is completely covered.
  5. Repeat this operation until supplies last, then place it on a plate and place everything in the freezer for an hour.
  6. About 10 minutes before cooking them, preheat your oven to 220°C.
  7. Place your cookie dough balls on a large baking sheet lined with parchment paper, making sure to leave spaces between them so they have room to spread.
  8. Bake the cookies for 20 to 22 minutes.
  9. Let your cookies cool on the baking sheet for about 10 to 15 minutes before removing them.
