The list of ingredients for 4 people:

  • 1 knob of butter
  • 2 pork fillets of approximately 900 g
  • 250 ml of cream
  • 200 ml of veal or beef stock
  • 2 tablespoons strong mustard
  • pepper and salt

The steps of the recipe:

  1. Start by taking the meat out of the fridge 1 hour before cooking. Season it with pepper and salt.
  2. Preheat the oven to 150°C.
  3. While it is heating up, foam the butter well in a hot pan. When the fat is sizzling, add the meat and cook it for 5 to 8 minutes on each side so that it has a nice brown crust.
  4. Once the meat has browned nicely, place it in a baking dish and bake for 5 minutes at 150°C.
  5. It’s time to make your sauce. For this, you will need the cooking juices from the meat in the pan. Deglaze it with the veal stock and the cream. Season with salt and pepper, let it thicken a little before adding the mustard. Mix vigorously to remove any lumps. This is how you will obtain a very creamy sauce.
  6. Take your meat out of the oven and cut it into slices that are neither too thin nor too thick. Cover everything with sauce.
