Preparation: This is how pasta with pumpkin and spinach works

  1. First, cook the pasta in salted water until it is al dente, depending on your taste. Then pour them off.
  2. While the pasta is cooking, peel the red onion before halving it and cutting it into strips. Then wash and halve the Hokkaido pumpkin and remove its seeds. They dice the pulp. Then clean and wash the spinach leaves.
  3. Now heat 1 tablespoon of oil in a pan and add the spinach. Sauté over medium heat until wilted, about 5 minutes.
  4. Take a second pan and heat the remaining oil in it. Add the onion strips and the pumpkin pieces and fry over medium heat for 6 to 8 minutes until golden brown. Season with salt and pepper to taste.
  5. Mix the cream cheese with a splash of water in a bowl and stir the sauce until it is creamy. Then add them to the pan with the pumpkin and onions and mix in the spinach too. Bring the whole thing to the boil briefly, add the pasta and season the dish again with salt and pepper if necessary.
  6. Finally, distribute the finished pumpkin and spinach pasta on plates. Bon appetit!
