The recipe for the ricotta-salmon galette des rois

Ingredients :

  • 2 puff pastry
  • 500 g of ricotta
  • 6 slices of smoked salmon
  • 2 eggs
  • 1 egg yolk
  • 1/2 lemon
  • dill

The preparation steps:

Step 1: preheat your oven to 210 ° C (thermostat 7).

2nd step : whip the ricotta with the juice of 1/2 lemon. Add the eggs and the salmon. Cut them into pieces and add the dill. Do not salt.

Step 3: open a disk of puff pastry on the work surface (leaving the sheet of baking paper). Spread the ricotta-salmon mixture, leaving 2 cm of free edge, place the bean and cover with the second disc of dough. Lightly press the edges.

Step 4: dilute the egg yolk with 1 teaspoon of water and brush the pancake. Place in the fridge for 30 minutes then before placing the pancake in the oven, brush it again with egg and make the drawing with the non-cutting side of the knife (without piercing the dough) and create 3 small perforations to avoid the effect bellows.

Step 5: bake for 20 minutes.

The recipe for the goat cheese and spinach galette des rois

Ingredients :

  • 4 slices of ham
  • 2 puff pastry
  • 200g goat cheese
  • 800g spinach
  • 2 tablespoons of crème fraîche 30% fat
  • 1 clove of garlic
  • 1 small onion
  • 2 eggs + 1 egg yolk

The preparation steps:

Step 1 : preheat your oven to 200 ° C (thermostat 7).

2nd step : peel and chop the onion and sauté for 5 minutes with the chopped garlic clove in a tablespoon of oil. Add the spinach and continue cooking for about 10 minutes.

Step 3: pour the spinach into a blender, add two eggs, cream and mix.

Step 4: roll out a pie crust, keeping the sheet of baking paper on the baking sheet. Distribute half the spinach, the slices of ham, the goat cheese cut into slices and cover with the spinach (Don't forget the bean!). Cover with the second pie crust, press to seal the edges. Brown with the egg yolk diluted in a little water and place in the refrigerator for 20 minutes.

Step 5: take out the galette, decorate it according to your tastes using the tip of a knife and cook it for about 30 to 35 minutes on hot air or 40 to 45 minutes on traditional heat.

The recipe for the galette des rois with cauliflower

Ingredients :

  • 1 cauliflower
  • 2 large tablespoons of sour cream
  • 2 puff pastry
  • 3 tablespoons of breadcrumbs
  • 125 g of bacon or diced ham
  • 50 g of Comté, cut into cubes
  • 1 egg + 1 yolk to brown

The preparation steps:

Step 1 : preheat your oven to 200 ° C (thermostat 6-7).

2nd step : cut the cauliflower into pieces and cook for 20 minutes in boiling salted water (it should be crushed with a fork).

Step 3: Roll out the dough in a mold, then sprinkle with breadcrumbs. Divide the bacon or diced ham.

Step 4: mash the cauliflower with a fork. Add the cream and 1 egg, then mix. Place the mixture on the dough, leaving about 2 cm empty on the edges then sprinkle with diced Comté.

Step 5: place the second dough, then close by folding it from the bottom over the top. Brush your galette with egg yolk, then bake for 45 minutes.

The recipe for the galette des rois with bacon and potatoes

Ingredients :

  • 600 g of potatoes
  • 2 puff pastry
  • 1/2 liter of whole milk
  • 4 slices of white ham
  • 250 g smoked bacon
  • 1 egg
  • nutmeg
  • salt

The preparation steps:

Step 1 : preheat your oven to 180 ° C (thermostat 6).

2nd step : Peel the potatoes, cut them into fairly thin slices. Cook them for ten minutes in a saucepan, covered with milk. Season with nutmeg and salt. Check with the tip of a knife that they are cooked through, but firm, then drain them.

Step 3: meanwhile, cut the ham into cubes. Brown it in a pan with the smoked bacon.

Step 4: in a mold with a sheet of baking paper (or previously greased) put the first puff pastry. Line with a layer of potato slices, leaving about 3 cm free edge. Add 1 layer of ham and bacon, then a new layer of potatoes until you have run out.

Don't forget the bean!

Step 5: cover with the second puff pastry and glue the edges well. Then brush the dough with a mixture of egg yolk and milk. Bake for 25 minutes.
