Scrambled eggs with a difference: the Greek strapatsada also puts onions, tomatoes and feta in the pan – here you can find out how the simple recipe works.

For many people, scrambled eggs should not be missing on the breakfast plate, after all they are not only incredibly tasty, but also very protein-rich and good for building muscle. In Greece scrambled eggs are prepared in a special way: Strapatsada, also called Kagianas, is refined with tomatoes and feta, giving it a unique, spicy taste. The preparation is absolutely uncomplicated, because you probably already have most of the ingredients in stock at home.

Strapatsada: Ingredients for 4 servings

  • 1 small onion
  • 400 g tomatoes
  • olive oil
  • oregano
  • 4 eggs
  • Salt pepper
  • Feta

Preparation: This is how Strapatsada works

  1. First peel the onion and cut it into fine cubes. Wash the tomatoes, cut them in half and rub the cut side into a bowl with a kitchen grater: this way, only the skin and the base of the stem remain.
  2. Heat the oil in a pan and sauté the onions. Then add the tomato puree and oregano and simmer for a few minutes over medium heat.
  3. In the meantime, beat the eggs in a bowl, stir and season with salt and pepper.
  4. When most of the liquid in the pan has evaporated, pour the beaten eggs into the pan and stir into the tomatoes. Set the temperature a little higher and let the egg set for about a minute. Then continue to fry while stirring until the strapatsada has reached the desired consistency.
  5. Finally sprinkle the scrambled eggs with chopped feta and serve with bread while still warm.

Tips for your strapatsada

Of course, you can change the egg dish to suit your taste. Strapatsada, for example, tastes very delicious with bell pepper, bacon or garlic. If you want to give the dish a little more spice, you can refine it with paprika powder, parsley or basil are also good garnishes.

The tomatoes can also be peeled by peeling them scratch it crosswise, pour hot water over it and then quench it in ice water, the variant with the kitchen grater works much faster.
