Sodexo brings together talented Chefs from around the world for a sustainable culinary innovation competition – 11/15/2023 at 6:50 p.m.

In line with its ambition to become the global leader in sustainable food and quality experiences, Sodexo organized the second edition of its

Sustainable Chef Challenge

an annual international culinary competition to design and promote tasty, low-carbon creations.

THE

Sustainable Chef Challenge

is one of the many initiatives that Sodexo is deploying to celebrate the virtues of sustainable and healthy eating. It is in this spirit that Sodexo is increasingly using new ingredients and working to design plant-based recipes to ensure that 70% of its main dishes can be labeled “low carbon” by 2030.

For the second year in a row, Sodexo brought together 7 talented Chefs from around the world to participate in the

Sustainable Chef Challenge

organized on November 15 in Landsberg am Lech, Germany, in partnership with Rational AG, Eaternity and WWF.

The Chefs were evaluated on their ability to offer two sustainable dishes based on four fundamental criteria

:

  • Promote plant-based and sustainable meals

  • Promote taste, nutrition, health and well-being

  • Sourcing responsibly

  • Avoid food waste

During the event, the Chefs amply demonstrated their expertise and passion. Faced with a panel of experts, including three-star Michelin German Chef Thomas Bühner, two Chefs stood out:

  • Chef Sharon McConnell (Northern Ireland) with her “Celeriac steak with pistachio crust” and her “Vegan chocolate mousse with dates and walnuts”.

  • Chef Ricardo Machado (Brazil) with his “Medallion of banana peel sautéed with sweet potatoes” and his “Banana and coconut puree”.

They received the Grand Prize for Culinary Experience for this tasty and sustainable cooking demonstration.
