  1. Clean and wash fresh leaf spinach. Blanch in boiling water, pour into a colander and drain. Defrost frozen spinach and drain it too. Grate cheese finely. Peel and finely dice the onions and garlic. Squeeze out spinach and chop roughly.

  2. Heat 2 tablespoons of oil in a wide pan. Sauté onion and garlic in it. Add spinach and sauté. Season with salt, pepper and nutmeg and set aside.

  3. For the béchamel sauce, melt the butter in a saucepan. Add flour and sauté until light. Deglaze with milk and cream while stirring. Bring the sauce to the boil and simmer for about 5 minutes, stirring several times. Stir in about a quarter of the cheese. Season with salt, pepper and nutmeg.

  4. Preheat the oven to 180 degrees top/bottom heat (fan oven 160 degrees, gas level 2). Grease a baking dish and spread some béchamel sauce on the bottom of the dish. Then alternate layers of lasagne sheets, spinach and sauce in the dish. Finish with lasagne sheets and remaining sauce and sprinkle the remaining grated cheese on top. Bake the spinach lasagne in the preheated oven for about 40 minutes.

Tip

  • Depending on the size of the baking dish, you may need more lasagne plates.
  • The spinach lasagna is excellent prepare. Simply layer all the ingredients and store in the fridge. The baking time is then extended by 5-10 minutes.
