Salmon is one of the most popular food fish. Whether bred for consumption or wild: Stiftung Warentest has examined a total of 25 frozen fillets in more detail. The result: Above all, the discounter products can place themselves at the top. Read more about this here.
With or without skin, chilled or frozen, farmed or caught in the wild: salmon is one of the most widely consumed fish in Germany. What about the quality? Stiftung Warentest took a closer look at 25 packaged salmon fillets. 20 fish fillets received the grade “good”, 4 received the grade “satisfactory”. Only one was rated “sufficient”, reports the foundation in its magazine “test” (edition 9/2021).
6 fresh and 12 frozen fillets of farmed salmon and 7 frozen wild salmon fillets were tested. In addition to a sensory assessment, the testers also carried out tests for pollutants, germs and parasites, among other things. The completeness of the packaging information and the packaging itself also played a role.
Laugh fillets at Stiftung Warentest: These are the test winners
The testers were most impressed by two fresh farmed salmon fillets:
- Lidl Fisherman’s pride (15 euros per kilo, overall grade 1.7)
- real Profish fillets (22 euros per kilo, overall grade 1.9).
Two frozen breeding products also received an overall quality rating of 1.9:
- Aldi Nord Gut organic salmon fillets (30 euros per kilo)
- Edeka Organic salmon fillets (27.20 euros per kilo)
Overall, salmon from aquaculture performed better in the product test assessment than the usually cheaper wild salmon. The testers attested that the fish caught in the North Pacific had a less intense salmon taste. They are also not as buttery, tender and juicy as the fish from aquaculture.
According to Stiftung Warentest, the reasons for this are, among other things, a lower fat content and natural fluctuations in quality. In addition, wild salmon lie in the frost for up to a year longer than farmed salmon after they are caught, which can affect the consistency and aroma. It is worth taking a look at the label that shows the date of the freeze.
