A fresh and quick recipe to prepare

The ingredients of the recipe for 4 people:

  • 3 eggplants
  • 1 round puff pastry
  • A few coriander leaves
  • flower of salt
  • Olive oil

For the tomato spread:

  • 150 g fresh feta or yogurt, not too creamy
  • 120 g sun-dried tomatoes preserved in olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon coriander powder
  • 1 clove of garlic, peeled and degermed
  • A few coriander leaves
  • 1 lemon

The recipe steps:

  1. Preheat the oven to 190°C. Cut the aubergines into slices, season them with fleur de sel then color them with a little olive oil in a hot pan or on the plancha. Reserve on a plate.
  2. In the bowl of a blender, pour the cream cheese, sun-dried tomatoes, spices and garlic. Mix then add the coriander leaves and lemon juice.
  3. Place the puff pastry on the work surface and spread the spread in the center, leaving 5 cm free on the edges.
  4. Distribute the eggplant slices in a tatin mold then place them on top of the spread puff pastry. Prick the dough with a fork and bake for 30 minutes.
  5. At the end of cooking, unmold the pie (turn over sharply, drop a few coriander leaves to decorate and serve.
