A fresh and quick recipe to prepare
The ingredients of the recipe for 4 people:
- 3 eggplants
- 1 round puff pastry
- A few coriander leaves
- flower of salt
- Olive oil
For the tomato spread:
- 150 g fresh feta or yogurt, not too creamy
- 120 g sun-dried tomatoes preserved in olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon coriander powder
- 1 clove of garlic, peeled and degermed
- A few coriander leaves
- 1 lemon
The recipe steps:
- Preheat the oven to 190°C. Cut the aubergines into slices, season them with fleur de sel then color them with a little olive oil in a hot pan or on the plancha. Reserve on a plate.
- In the bowl of a blender, pour the cream cheese, sun-dried tomatoes, spices and garlic. Mix then add the coriander leaves and lemon juice.
- Place the puff pastry on the work surface and spread the spread in the center, leaving 5 cm free on the edges.
- Distribute the eggplant slices in a tatin mold then place them on top of the spread puff pastry. Prick the dough with a fork and bake for 30 minutes.
- At the end of cooking, unmold the pie (turn over sharply, drop a few coriander leaves to decorate and serve.
A few tips for a tart tatin with eggplant and fresh cheese to bite into
Add mild spices like thyme, oregano, rosemary or even a pinch of chilli to enhance the flavors. Opt for a quality fresh cheese that goes well with eggplant.
