FRançois Daubinet forged his star pastry and palace skills at the Hôtel de Crillon, then with Christophe Michalak at the Plaza Athénée. In 2015, he became pastry chef at Taillevent, before taking over the management of sweet creations at Fauchon in 2017. Today, he cultivates the desire to present personal projects that are close to his heart. To start with Inspirations, 10 creation stories in pastry (La Martinière editions) in which the chef has followed in the footsteps of the personalities who have inspired his ten most innovative creations: from “Pain des rois” to “La Truffe”, via “L’Obsessionminerale”.
