The study proves that this method of preparing rice can reduce the absorption of calories from rice by the body, even if you reheat your rice afterwards. In other words, it allows us to change the way we digest rice, which is usually transformed into glucose by the small intestine, before it is stored by the body in the form of fat. By being cooked in this way with coconut oil, its amount of digestible starch is reduced because the oil enters the rice during cooking and makes it invulnerable to our digestive enzymes. Some of the carbohydrates normally absorbed by the body are no longer absorbed and only pass through the intestine without turning into fat. To make the rice even less caloric, the passage in the refrigerator is also important because during this process, the digestible part of the rice starch comes out of the grains.

For the trick to work, be sure to add the equivalent of a teaspoon of coconut oil to the water for each portion of rice cooked in the pan.
